P1-Oatmeal Pancakes
I have tried every pancake recipe that I have found posted and they weren't for me so I re-created a recipe I had for whole wheat pancakes. Hope you enjoy them. I blend a container of oatmeal at a time in my food processor so I'll always have "oatmeal powder" on hand since I use it alot.
1 1/2 c. oatmeal powder
3 packets Splenda (or any other sugar sub.)
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1 c. ff milk
1/8 c. oil (I use canola)
1 egg white
If its too runny, add a little more oatmeal or milk if its too thick. Use a 1/4 cup to pour the batter and cook on a griddle at 350 degrees. It makes 8 pancakes. They last me a couple of meals. I serve them with a peach jam that I made using fresh peaches and lemon juice...Delicious!
Note: I was a little concerned with it being Phase 1 since the 1/8 c. oil but it makes 8 pancakes so its very little oil per pancake so if you are concerned you might wait til Phase 2.
