Post Spinach and Mushroom Breakfast Frittata - Induction Friendly

Hubby and I get very tired of the usual breakfast food when on Atkins. Eggs and bacon can get old, so I kicked it up a notch. Enjoy!

Frittata for 2 large servings.

4 eggs, well beaten with 1 tblsp of heavy cream (1.5g carbs)
1 cup, fresh baby spinach (1 g carb)
1 cup, sliced clean baby bella mushrooms (2 grams carbs)
1 tablespoon chopped onion (0.5 gram carbs)
1oz favorite shredded cheese -white cheese is great! (check carb ct)
butter (0 gr)

Heat oven to 350º. Melt a heaping tablespoon of butter in an oven safe skillet. Toss in onion and mushrooms. Sprinkle with salt or salt substitute and pepper if desired. Sautee, stirring frequently. When onion begins to turn translucent, add spinach and cook until wilted. Add eggs, and make sure they cover the bottom of the pan. Season to taste and dot with butter. Add 1 oz of shredded cheese evenly over the top and put entire pan in to bake at 350º for 20 minutes until fluffy and starting to brown. Slice immediately and serve.

Carb Count
Entire Frittata using Parmesan cheese is 5.5 grams of net carbs.
