Default Fish Dijon

The original recipe (from epicurious.com) is a family favorite. I have made substitutions to make it SBD friendly:

2 6 to 8-ounce orange roughy fillets
2 tablespoons (1/4 stick) butter spread (SBD allowed), melted*
1 tablespoon Dijon mustard
1 1/2 teaspoons fresh lemon juice
1 teaspoon Worcestershire sauce
3 tablespoons nut meal**


Chopped fresh parsley
Lemon wedges

Preheat oven to 450°F. Butter (I used Pam) 13 x 9 x 2-inch glass baking dish. Arrange fish fillets in prepared dish. Season with salt and pepper. Blend butter, Dijon mustard, lemon juice and Worcestershire sauce in small bowl. Spread half of butter mixture over each fillet, covering completely. Sprinkle half of nut meal over each.

Bake fish until just cooked through, about 7 minutes. Sprinkle parsley over. Garnish with lemon wedges. (2 servings)
*Original recipe calls for unsalted butter
**Original recipe calls for fresh white breadcrumbs. I used ground up walnuts (walnut meal) that I purchased at Trader Joe's.

Hi Ruthxxx,

Right after I posted the recipe I read your other post of serving size and nutritional info. There was no nutritional info listed but I did add in the serving size at the end of the cooking directions.
