Spinach Stuffed Chicken

  • 2 pkg (10-oz ea) frozen, chopped spinach, thawed & squeezed dry
    1 cup (4 oz) shredded swiss cheese
    3/4 cup ricotta cheese
    1/3 cup grated parmesan cheese
    3 Tbls finely choped onion
    1 garlic clove, minced
    1/4 tsp each of salt, pepper, and ground nutmeg
    6 bone-in chicken breast halves
    2 Tbls olive oil
    1 tsp paprika
    1/2 tsp dried oregano
    1/2 tsp dried thyme
    Additional paprika, opt.

    Combine the first 9 ingredients; gently stuff 1/2 cupfull under the skin of each chicken breast. (I used bonless, skinless and cut a groove to fit the stuffing) Place in a greased 15 x 10 x 1 baking pan. Combine oil, paprika, oregano, and thyme; brush over chicken. Sprinkle with additional paprika, if desired. Bake at 350 for 1 to 1 1/4 hours or until juices run clear. 6 Servings
  • This is similar to something I made the other day.... I added artichoke hearts to the stuffing mixture... It reminded me of spinach artichoke dip at Friday's yummy
