Default Meatloaf :)

1 lbs. lean ground beef (less than 10% fat)
2-3 links of chicken sausage (there's plain chicken sausage and then there's different flavors like Pesto and Sun dried tomatoes, I use different ones to change the recipe up a bit)
2 T chopped onion
1/2 T garlic powder
1/2 T basil
1/2 T parsley
1 can of fire roasted diced tomatoes
1 eggs slightly beaten
salt and pepper to taste
*I sometimes add some spinach

Most chicken sausages come in a casing, but some don't. If you get the kind that does, remove the casing. Then chop the sausage up into small pieces, or stick in a food processor.

Add all ingredients together and mix well

bake at 375 degrees for about 40 minutes in an ungreased loaf pan. After about 20 minutes in the over, I take the loaf out and drain any liquids that might be in the pan. Then return and cook for the remaining 20 minutes.

Makes 4 servings.
