Stuffed Chicken Breast - Phase I
 
I made this for dinner tonight with steamed brocolli on the side. It was delicious. This recipe is for 1 serving. But I made 2 and am saving one for tomorrow.

Stuffed Chicken Breast

1 boneless chicken breast
1/3 cup part-skim ricotta cheese
1/4 cup chopped frozen spinach
1/8 cup grated Parmesan cheese
1 oz shredded part-skim mozzarella cheese
1/2 cup Crushed Tomatoes With Italian Herbs (canned)
basil
garlic powder
Olive Oil Cooking spray

Slice a deep pocket lengthwise in narrow side of chicken breast. Mix parmesan, ricotta and spinach. Stuff into pocket. Place on baking sheet sprayed with cooking spray. Spray chicken lightly with cooking spray. Sprinkle with seasonings. Bake 45 minutes. 5 minutes before done sprinkle shredded mozzerella over and sauce.

I am really enjoying this site since discovering it in March. I have been on SB since March 19 and have lost 13 pounds. I have found some great recipes and suggestions.

I especially enjoyed the crepes and the stuffed chicken breast.

This sounds yummy. I think it's something that my DH would actually eat without knowing what's really in it ;) (he hates spinach & he's not that crazy about ricotta)

Great Variation
 
I made this the other night but I did not have the tomatoes. Instead I used fresh lemon juice from the beginning and put the lemon rinds and fresh rosemary in the pan. Cooked covered for 30 minutes and uncovered last 15. Use a lot of lemon juice. I used 4 lemons for six pieces of chicken.

This sounds amazing!!! Thank you, guys, for keeping me sane...I tried the tuna salad today and found it awful...blech! I know I can do this, if I can stick to things that really taste good to me!
