Veggie Bean Casserole

  • I am pretty sure this is Phase 1 friendly if not let me know


    1 Red Bell pepper, slivered
    1 cup diced fresh tomatoes
    1 cup sliced celery
    2 teaspoons Olive Oil
    1 tablespoon Italian Seasoning
    1/4 teaspoon garlic powder
    1 (16 ounce) can kidney beans
    2 tablespoons grated Parmesan cheese

    In a bowl toss the red pepper, tomatoes and celery with olive oil. Sprinkle seasoning and garlic powder over mixture. Place in a medium size baking pan. Bake at 375 degrees for 30 minutes; stir after 15 minutes. Stir in Kidney beans and return to oven for 10 minutes. Sprinkle cheese on top before serving.
