what to do with brocolli stalks?

  • Making roasted broc. Feels like such a waste of expensive healthy food to just chuck the stalks.

  • KC - won't they roast too, cut into coins? When I boil broccoli, I cook the florets and the stalks cut like this. I gather the stalks are more nutritious than the florets.

    Or cut them finely (even dice them) and put them in a mixed salad for bite?
  • I chop them up and use them in salads or stir-frys or soups. There's lots of great nutrition in broccoli stems.

  • Most meals I make I keep the stalks on. If I do have to take them off I use in soups and slaw.
  • broccoli soup (cream type)
    broccoli slaw julienne style and tossed with ranch dressing is delicious!
