Here come the holidays! Let's get our healthy holiday recipes on here for each other. I have some good recipes for "sweets" that I thought you guys would enjoy!!

Crustless Pumpkin Pie (WW)

Preheat oven to 400 degrees. Put empty metal pie plate in oven for 15 minutes.
Mix: 1- 15 oz can of pure pumpkin with 1 large can evaporated fat-free milk.
Add: 3 tsp. pumpkin pie spice (Can also add a little cinnamon, ginger...)
1/2 C. Splenda
3/4 C. egg substitute (beaten)

Take pie plate out of the oven & pour mixture into it. Reduce oven to 350 degrees & bake pie for 35-40 min.

Cut into 8 slices - 1 pt per slice
If using crust (deep dish) - 3 pts. per slice. *My WW leader said that adding 1/2 c. of reduced fat Bisquick added a nice, fluffy texture to this pie.

Default Drop Biscuits

1 C. self rising flour
1/2 C. skim milk
2 TBSP light mayonnaise

Mix and put in 6 ct. muffin tin sprayed with Pam

400 degrees for 10-12 min.

1 point each-------(try these with the Healthy Choice 1 pt. sausage patties!)

Default Brownie Cookies

1 pkg. reduced-fat or fat-free brownie mix
1 C. orange juice
2 1/2 C Wheat Bran

Combine and drop by heaping teaspoon onto cookie sheet. Bake 10-15 min. at 350 degrees.

Default Fat Free Pound Cake

1 8 ounce pkg. FF cream cheese
1 8 oz. tub of FF Ultra Promise Margarine
2 1/2 C. sugar or 1 1/2 C. sugar and 12 pkts. of Sweet & Low
4 eggbeaters
3 cups self rising flour
1 C. skim milk
3 TBSP flavoring (vanilla, almond, or lemon)
2 egg whites beaten stiff

Cream sugar, cream cheese, and margarine. Add egg beaters, flour, milk, and flavoring. Fold in egg whites and pour into pan greased with buttery Pam.

Bake at 325 for about 1 hr. and 15 min.
Cut into 8 slices or make 2 mini-bundt cakes. Slice while warm.

Spray cake with buttery Pam and sprinkle powdered sugar on top.

Default Lemon Cake

1 lemon cake mix
12 oz. can of diet Mountain Dew

Mix and bake at 350 in a 9X13 pan per pkg. directions (usually takes a little less time to bake, actually)

Frosting: 1 large tub FF Cool Whip, 1 T lemon juice, 4 pkts. Splenda. Whip these together and use to frost cake. Dust cake with powdered sugar.

10 servings at 3 pts. each

Default Fudge Recipe

No Fat Vanilla Fudge

Recipe By : W/W Magazine

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 1/3 cups sugar
3 ounces cook and serve vanilla pudding -- not sugar free
3 tablespoons Butter Buds®
1 cup evaporated milk
2 tablespoons evaporated milk

1. Moisten 3 kitchen towls with water; lay one flat on work surface. Place 10x15-inch sheet pan on top of wet towel. Line 6x8x2-inch baking pan with foil.

2. In 10" cast-iron Dutch oven, add all ingredients and bring to a boil over high heat; stirring constantly. Continue cooking 4 1/2 minutes. Remove from heat and continually stir until boiling stops.

3. Pour into sheet pan. With spatula, push mixture backa nd forth, scraping fudge crystals from bottom. After 2-3 minutes, replace damp towl with a fresh one; continue to scrape pan and repeat after 2 more minutes.

4. When mixture becomes thick, about 1 minute, spread evenly into prepared baking pan. Let stand 10 minutes. Cut in 1-inch squares. Wrap in wax paper; will keep about 1 week.

Fantasy Fudge - 1 Point

Recipe By : Kraft and Parkay

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 cups sugar
3/4 cup margarine
2/3 cup evaporated milk
12 ounces semisweet chocolate chips
7 ounces marshmallow cream
1 cup chopped nuts -- optional
1 teaspoon vanilla

1. Combine sugar, margarine and milk in heavy 2-1/2 to 3-quart saucepan; bring to full roling boil, sitrring constantly. Continue to boil 5 minutes over medium heat or until candy thermometer reaches 234 degrees F stirring constantly to prevent schorching.

2. Remove from heat; stir in chocolate until melted.

3. Add remaining ingredients; beat until well blended.

4. Pour into 13x9-inch baking pan. Cool at room temperature. Cut into squares.

Yummy, Lisa! Those all sound so good! I have a favorite fudge recipe that I've been using for YEARS and I just can't make any other kind....low fat/low sugar even! Just can't do it!

I'll post my supper tonight. It's an easy crockpot recipe!

Default Southwest Crockpot Chicken

***You can add whatever you like to this recipe, it's just that easy!***

1 jar Salsa
1 can corn
1 can black beans
3-4 chicken breasts or other chicken parts (I prefer breasts)

Spray bottom of crock pot with non fat spray.
Put in chicken, sprinkle with whatever seasonings you like (I add Garlic salt)
Add jar of salsa
Add drained corn & beans on top!

Cook on low for 8 hours!
Serve with rice.
Add sour cream and/or cheese for garnish

***Variation***
You can shred the chicken and mix it in with the sauce and use it to make a tortilla, buritto, or enchilada! The ideas are endless with this dish!

Julie that sounds so yummy! And I have most of the stuff!! I am making it this weekend .

O.K....got another recipe for you!!!! Just made it and tasted it, and it is fabulous!!

Cranberry Orange Muffins

1 box of Krusteaz fat free Cranberry Orange Muffin Mix
1 can of pure pumpkin
1/2 C. water

Mix well. Bake as instructed on package. Makes about 15 muffins.

1 point each!!

Default Try this one!

I love french fries. McDonalds is one of my favorite places to get them. But, as we all know, fries from there are not the best thing to have on a frequent basis. I found myself wanting crispy french fries so badly last night, and I recalled one of my former WW leader's recipes.

Crispy Oven French Fries

Take a medium to large potato and slice into thin strips. Dredge the strips in an egg white. Place the strips on a cookie sheet sprayed generously with Pam (Actually, I think the recipe said you could use a small bit of olive oil, but I didn't want to). Sprinkle seasonings on the potato strips - salt, pepper...could use onion powder or season salt... Bake in a 350-400 degree oven until crispy and "done". These were terrific. Add some ketchup...and watch the fries craving go away!!!

I so didn't even realize this thread existed. I am such a dork!

Well, the espresso thumbprint cookies I've been talking about are certainly NOT healthy, but I have a great warm, filling meal that IS! AND it's almost totally fat-free!

Chicken Stew

2 lbs of skinless, boneless chicken breast, with all fat cut off & cut into small pieces (bite size)
2 cups chopped carrots
2 cups chopped celery
1 large white onion, chopped
6 green onions, chopped
1/4 cup minced garlic (I use the jar kind, easier...)
assorted spices (I use rosemary, savory, garlic salt, pepper, cumin, and oregano)
4 medium potatoes (whatever kind), peeled & chopped into 1/2" chunks
2 containers of fat-free chicken broth (or use a bunch of water & broth cubes)

Put 'em all in a crock pot EXCEPT THE CHICKEN -- DON'T PUT THAT IN!!!! -- And cook on low/med for about 5 hrs. I take my frozen chicken out when I start this, and when it's thawed out, I start it.

Cook the chicken thoroughly with a little olive oil (evoo is best) & some garlic & onions until it's done, and then pop that all into the crock pot. Simmer for another hour or so, then enjoy! You've got a super healthy, super EASY, almost thought-free dinner that kids love and makes grownups feel better.

Good additions:
*1 cup of rice. I prefer white, but brown works just as well. *Add at beginning*
*1/2 cup egg noodles, or whole-wheat noodles if you prefer. *Add 1 hr before serving*
*Leeks, mushrooms, sugar-snap peas, water chestnuts, etc. Various veggies. Toss 'em in at the beginning. If you wanted more of an asian-style soup, here, add a bit of soy sauce & toss in some asian-style veggies.

YUM!

The other way to do this is to use stew meat from the store. Get about 1.5 lbs, and cook until it's well-done. Same veggies & whatnot, just don't use chicken stock. Try beef stock or veggie bullion cubes.

Default Strawberry/Pretzel Dessert

2 cups crushed pretzels
4 T. sugar (substitute with Spenda if desired)
1/2 stick margarine (i melt it)
Mix all of this together and spread in 9 x 13 pan and bake at 350 for 10 minutes.

Cool crust .
Mix together 8 oz. Cool Whip (you can use the "Free"), 1/2 cup sugar (or Splenda), 8 oz cream cheese (fat free if desired).
Spread evenly onto crust.

Mix large Strawberry (again, I use sugar free) Jello with 2 cups HOT water (not boiling) and then add one 10 oz. pkg. frozen strawberries. Stir together and pour onto cool whip layer.

Refrigerate until chilled/set. Enjoy!
