  • Wow, this sosunds awesome. I am a newbie but this def sounds like a challenge I can handle this seeing that I eat salads for lunch and dinner anyway. Well they key to success here for me will be preparation so off to find some great receipes..I will def share
  • Yay! Welcome dunsready! I try to keep some spinach in little baggies, as well as tons of veggies. That way if I don't have time to really make a salad I can just throw all that together really quickly.
  • I'm totally in! I have a billion salad recipes I've been wanting to try. I made up a board on pinterest of the salads I'm considering for this challenge - you can see it HERE.

    Chocolate Avocado Breakfast Salad? Breakfast Salad with Maple Vinaigrette? Turkey Burger Salad with Pub Dressing?

    I'm not going to start the challenge until Monday, because that's when I usually begin a new week of menu planning.

    I look forward to reading about the awesome salads everyone is eating!
  • No problem Novus! I'm just starting it today because it will give me one full week until Memorial day weekend when I'm going camping. Mondays are usually an easier start for me too.



    SO...I hope if there is anyone else starting with me today that you are pumped and excited! I know I am I was so tired last night, but I forced myself to get some salads ready, though they are pretty basic.

    Here is the plan/breakdown for today:

    Breakfast: Spinach Spring Mix, Feta Cheese, Walnuts, Strawberries
    Snacks: Apple, Carrots, Banana
    Lunch: Spinach Spring Mix, 1/2 Avocado, Tuna in Water
    Dinner: Spaghetti Squash, Yellow Squash, Zuchinni, Asparagus, Onion, Garlic mixed with a little bit of pesto on top of Spinach! Yum!!!!

  • Well, I had a boiled egg, smoken salmon, slice of ham, onion, tomato and a fruit salad for breakfast.

    And a chicken salad for lunch.

    I don't eat dinner. I sink beer and/or red wine instead.
  • I'm totally new to having salads for breakfast, so mine will be a bit odd.

    Breakfast: Side Salad and 5 Strawberries
    Lunch: Lettuce mix with celery stalks
    Dinner: Salad with Crispy Chicken w/ bacon and cheese. (We went out for dinner for my dad's birthday)

    Plus I drank about 50 oz of water.

    Maple-Thyme Pork Chop (recipe), broccoli slaw, bell peppers, pears, pecans

    Lunch
    Spiced Honey-Lemon Chicken (recipe), artisan lettuce, romaine lettuce, spinach, shredded carrots, shredded zucchini, broccoli, bell peppers, grapes, pistachios, and Lemon-Balsamic Vinaigrette (recipe)

    Dinner
    Shrimp, Avocado, and Corn Salad with Buttermilk Pesto Dressing (recipe) (romaine lettuce, corn, bacon, avocado, shrimp, dressing)



    ETA: Everything was so yummy and I would definitely make any of these salads again. The Shrimp Avocado & Corn was especially tasty.
  • Nice menu Novus!!! Mmmm, making me hungry

    Hope everyone had a great weekend! I did, and stuck to the salad challenge pretty well. As mentioned in my initial post, I did have 1 non-salad meal after my hike Saturday, but I still kept it full of veggies and healthy.

    Some Salad Highlights from this weekend were:

    My Spaghettie Squash salad w/yellow squash, zuchinni, onions, asparagus and pesto. I WILL b emaking this over and over again, and I brought leftovers today. Josh (my boyfriend) absolutely loved this.

    Then last night I made chicken, avocado, mango salsa over lettuce. Was pretty yummy as well! i could see that being good on bread too.


    TODAY'S PLAN:

    Breakfast: Fruit Salad
    Snack: 1/2 Cliff Bar, Coffee
    Lunch: Leftover Spaghetti Squash Salad
    Dinner: Beef Patty, Sweet Potato/Onion, & A1 Salad...MMMMmmmmm!

  • Last night I had lettuce, red cabbage, cabbage, green peppers, cucumbers, celery, cheddar cheese and 3 oz of taco meat. I really had the taco meat wrapped in lettuce and then ate everything else. It was amazing!
  • Today's salad line-up.....

    Breakfast
    Greens, Egg, and Ham Salad (recipe) (spinach, fried egg, ham)
    plus a side of cottage cheese with pineapple

    Lunch
    Cobb Egg Salad [with bacon, avocado, and blue cheese] (recipe), artisan lettuce, romaine lettuce, spinach, shredded carrots, shredded zucchini, broccoli, bell peppers, scallions, grape tomatoes
    plus a side of raspberries and peaches

    Dinner
    Asian Chicken Salad with Peanut Dressing (recipe) (romaine lettuce, broccoli slaw, edamame, scallions, bell peppers, cilantro, avocado, chicken, dressing)

    ETA: All these recipes were quite good, though not so fantastic that I want to make them again immediately.

    Well, here's what I'll be eating today:

    Breakfast
    Peperoncini Chopped Salad (recipe) (artisan lettuce, romaine lettuce, peperoncini, bell pepper, feta, dressing, and I added a soft-cooked egg)
    plus a side of cottage cheese with pineapple

    Lunch
    Pistachio-Cinnamon Chicken Salad (recipe), artisan lettuce, romaine lettuce, spinach, shredded carrots, shredded zucchini, peaches, dried cherries

    Dinner
    Broccoli Slaw with Shrimp and Cider Vinaigrette (recipe) (broccoli slaw, bell peppers, celery, scallions, cilantro, shrimp seasoned with smoked paprika, bacon, blue cheese, dressing)



    ETA: This chicken salad was phenomenal! Absolutely delish! I've made the Peperoncini Chopped Salad before; it's one of my favorite basic salads and is good with just about any protein added. My opinion of the Broccoli Slaw with Shrimp was kinna 'meh' - the flavors didn't work well together, or something.
  • Novus, I'm still on board with you. I have been swinging it though. I haven't made a menu out, but it has been nothing but salads.

    I am making NY Strip steaks tonight over salad greens. I really don't want red meat, but we will see.

    Sorry, had a sick kid yesterday so I wasn't able to login and give an update.

    Totally cheated last night and had pizza, blah! SO did not taste as good as all my yummy salads.

    I need to look up a yummy salad for toinght though to make sure I get my system cleansed after my cheat. I think I pinned one from Novus that was shrimp, avocado, and mango? I have everything but the magno, so i need to stop by the store and get that Mmmmmm, making me hungry!

    Keep up the good work everyone who is still in it! I promise I'm still here, thought I only have two days left (Friday is my 1 week mark.)
