Default St Patty's low carb desserts

Hello, all! I'm planning my Sy. patty's Day party menu and thought I'd share:

I found an article on the Prevention magazine website titled, "Luscious Low-Carb Desserts". I am making the cheesecake with Creme de Menthe sauce (for everyone else) and adding a "wee nip" of whiskey to the espresso in the Tiramisu to make it Irish Coffee.

Thought you may want to try it!

yes, that sounds like something I'd love to try in the future. Can you share the recipe?

I tried making a low carb cheesecake with a South Beach recipe and didn't care for it. Atkins' web site has a recipe for coconut macaroons I want to try.

Daydreamer, it probably is best to forego dessert until the sugar cravings are gone, but there are a few things you can have on induction. You can have SF jello, or mock danish
MOCK DANISH
2 ounces cream cheese
1 egg
2 teaspoons granulated Splenda
1/2 teaspoon vanilla
Pinch of cinnamon
In a small, microwaveable bowl, soften the cream cheese on HIGH 30 seconds. Beat well with a fork until creamy. Add the egg and beat very well until creamy; mix in remaining ingredients. Use a small rubber spatula to scrape down the sides of the bowl so that all the batter is in the bottom. Microwave on HIGH 30 seconds; rotate bowl (do not stir) and cook another 30 seconds. If center still looks too runny, cook another 30 seconds. May take up to 2 1/2 minutes total, depending on your microwave. Center should be a bit soft for the danish filling effect. Run a small rubber spatula around the danish, then under it to release from bowl. Transfer to a small plate. Cool until just warm or cool completely before eating.

There's no mistaking this for the real thing, but it tastes pretty good.
