Unhappy Going from LC meal delivery to on my own. HELP!!

Hi all, I recently stopped a low carb meal delivery system to try to do it on my own. During the month I was on the delivery system I lost 9.5lbs. Since ending it I have only lost 1 lb (in a two weeks). I was really excited and made a lot of low card caseroles, but they were so good that I felt like I was cheating. I really want to do this on my own but am just not sure if I should keep with the lots of lc vegtables & meat thing that I have been doing and be better about excercise or to start atkins. FYI I will not / can not give up coffee. Any advice??

Ok, nevermind I weighed this morning and I have actually lost 3lbs in two weeks. I can handle that, especially since I get to eat eggs, cheese, and bacon! The best part is no more green beans for breakfast (the meal delivery program always had green beans w/ breakfast)

I won't give up coffe either. I've read that decaf is best especially if you drink more than two cups a day. I don't so I'm sticking with regular coffee.

I just bought two cookbooks by Linda Gassenheimer. Good carb eating is her focus. Lots of recipes and there are pretty much written for two people (although they are not labeled as cooking for two). In the back there are some larger recipes if you want to host a party.

And I so relate to the green beans. I was on a diet delivery program and I swear that stupid gr. bean was in every meal!!!! It will be awhile before I'm ready to eat green beans again--can't imagine having them for breakfst--ick!!!

Thanks for the encouragment!! How do I get one of those little counters that show how much weight you have lost? I'll have to look into those cookbooks.
I just took a breakfast casserole out of the oven. I take a piece for breakfast every day. I add spinach even though the recipe doesn't call for it, because I like the idea of something green with breakfast...just not green beans

Now spinach sounds yummy in a egg casserole!

I think after 20 or 25 posts you can get a wt loss counter added to your
signature. Your close--keep on posting!

Weighed today and I haven't lost any weight It isn't my official weigh in day, so I am hoping that something drastic happens. If I don't lose any weight I will have to change something....just need to figure out what

hmmm never thought of a breakfast casserole, i was curious if i could have the recipe!! that sounds tasty and quick! maybe it will give me some time to sleep in longer!!! haha.

The recipe is so easy. Cook and drain 1lb of sausage. Spray an 8 x 8 casserole dish. place sausage in bottom of dish. Next put whatever veg you want, I use onions bc I have realized LC or not I HATE spinach Then a layer of shredded cheddar about 1/2 c. Then mix 4 eggs, 1/4c. heavy cream, and 1/4 c. water and pour in casserole dish. Back at 350 for 30-40 min.

**the original recipe doesn't call for any veg**

I've lost 20lbs all together. I found this great website w/ 100's of low carb recipes. I am not allowed to post it till I reach 25 posts.....

Till then.. you must try this one
mock twice baked potato casserole
1 bag frz calliflower
8oz sour cream
bacon crumbles (I used the pre packaged kind for recipes)
1c shredded cheddar

Mix all together and put in a 8x8 casserole dish. Bake at 350 for 30 min.

I'm going to try this (minus bacon, unless I can find turkey bacon) It sounds good, and I love cauliflower.

28 lbs so far!!!! I didn't lose any this week though
