I found a container of Egg White Salad with Chives. It is awesome! I also tried their Spicy Egg White Salad with Jalapenos and I love it even more! Each 6 oz. container contains only 100 calories. This is so filling with some light bread and sliced tomatoes.
I am going to experiment and try to make my own. It's basically chopped hard cooked egg whites with a nicely seasoned lite mayo type dressing.
Just thought I'd share - I get excited when I find low calorie foods!
P.S. It's a nice thick egg salad - I'm noticing they thicken it with xanthan gum, a natural thickener us gluten free-ers use in baking, etc. And I happen to have a bag in my cupboard which I use in my gluten free breads! This is going to be fun experimenting!
Sounds tasty. We finally got a Trader Joe's here, it opened today - and they had the local police directing traffic! I'll wait a while, but it's within walking distance of my office.
