Default Gigantic Mexican Salad for around 250 cals

I got this idea from a makeup guru on youtube (makeupgeek tv).. and I decided to try it for lunch today. It was so simple, delicous and very filling.

This is what I threw into a big bowl:

1/2 cup corn (I used unsalted, unsweetened canned corn)
1/2 cup pinto beans
Chopped yellow pepper
Shredded carrots
1 1/2 cupChopped Mixed greens
1 tbsp garlic pepper onion straws
2 tablespoons lite house salsa ranch (it's in the refrigerator by the salads)

You can other veggies if you want. But it made the most amazing at-home salad I've ever had for around 250 calories. The beans & the corn made it extremely filling!!! I am so stuffed =D

That does sound great! I would be tempted to add some chopped cilantro if I had some, too! I love salsa ranch. A lot of times I make my own with Kraft LF ranch and salsa- that way you can put in more salsa than dressing and keep the calories super low! The FF ranch is kinda grody, but the LF is pretty darn good!

and I've been looking for a ranch/ salsa type dressing. Hadn't thought to look in the fridge.

I've had this about 4 times and I love it. For the dressing I just mix half and half light ranch and salsa. I can't find the other dressing in canada.
