BTW, you can add WHEAT BRAN to burgers, patties, and in your meatloaf as well. For about 1 lb xtra-lean meat, use 1/4-1/3 cup wheat bran (the same as you would bread crumbs). Also, you can put 1-2 tbl in your pasta dishes (put into the sauce) to add more fiber to your pasta or other dishes.
Add grated or finely chopped veggies into your sauces for bulk (ie zucchini, onions, celery, carrots, baby spinach {frozen & use scissors to slice}, sweet peppers, and mushrooms, etc.
Here's a family favorite dish -- Creole Patties or Exeter Stew -- that is great all by itself or with a nice salad ...
1 lb xtra-lean hamburger
1/4 cup wheat bran
1 chopped onion, half in patties & half in the sauce
minced garlic or garlic powder (1 tsp)
1-2 tbl onion soup mix or to taste
1 large egg
1/2 tsp each salt & pepper
28 oz can diced tomatoes
1/2 cup frozen kernel corn
8 oz chopped mushrooms, optional
1/4 cup chopped green peppers, optional
Combine meat mixture and form into 2" patties; brown and cook (covered) for 15-20 minutes, turning at least once; add rest of onions, mushrooms, and peppers; brown a bit, then add corn and tomatoes; heat until bubbling for about 10 minutes. The original recipe had only onions and tomatoes with the patties, but then we started adding the corn and other veggies to make it go further as we had a big family. This is really nice served with green beans and/or coleslaw. We also served this with potatoes, but that is optional for those trying to lose weight.
