Default Sides

So I have my meats down, but I am still trying to find different sides. We usually have carrots or greenbeans everynight. Only corn occasionally because I have heard it's starchy. I was wondering do any of you guys eat Baked Potatoes. I think they are healthy I looked up their nutritional value and they sound like they are very healthy. Without too many toppings. I would just put I can't believe it's not butter on mine. Is this bad or good.

There are so many other veggies... also try some brown rice. I eat potoes often... I love redskined potatoes as well... but I do have just a regular baked potatoe a lot. I'm the person who can't just eat a meat and veggies for dinner... I always feel like something else is missing

I like the california mix frozen veggies that has cauliflower, brocolli and carrots. I mix it with some smart balance butter and s&p. Very yummy.
brown rice made with chicken broth (not instant either, I don't like instant brown rice at all)
pretty much any veggie roasted with salt and pepper and olive oil.
Asparagus, zuchinni, eggplant, squash, onion, potato, etc etc.
sweet potato with some butter
green beans sauteed in some tomato sauce and onions and garlic

What about zucchini? Artichokes? Asparagus? Peas? cauliflower? Broccoli? Summer squash?

I love to cut up a variety of veggies and lightly toss with EVOO, salt, and pepper, then roast them- they come out SOO good!

You can also toss in a bit of potato so you can enjoy them while having your veggies.

Also eating the skin makes the potato healthier I believe.

I went here and followed this recipe exactly and they came out SOOO good- I ate all the skin for the first time!
