  • I'm going to the grocery this afternoon and I need some ideas. I'm tired of the same old humdrum.

    So, what's cooking this week? Give me some healty ideas!
  • This week my husband made some Ceviche (sp?) with shrimp, tomatoes, onions, cilantro, 1 serrano chili, avacado, & lime juice. You can either eat it as is, or, I take 1 whole wheat tortilla, cut it with a pizza cutter, spray with fat free Pam cooking spray, season with anything (we use red pepper & garlic powder) bake for 4 minutes on each side at 400 degrees!!

    Ive never wanted real chips again, and its SOOOO refreshing & delicious!
  • last night was tuna casserole. 1 box barilla whole grain pasta, 2 cans cream of mushroom soup and 2 small cans of tuna in water, drained and topped with cheese and bread crumbs. it was 347.5 per serving (8 servings in the casserole dish) and mixed veggies as a side. not sure about tonight yet
  • I made a pasta dish with whole wheat pasta. It had spinach and broccoli (steamed), lime juice, cilantro, coconut milk & peanut butter with a little veggie broth to flavor and thin it. Turned out pretty tasty. It wasn't a ton of calories either and i'll have the rest for lunch soon.
    I am into potatoes lately. It's all i want to eat. I'll have some for supper i think

  • Last night was a gigantic salad with grilled chicken, quickly sauteed zucchini, asparagus, sugar snap peas, broccoli, edamame, and bell pepper, and raw cucumber and carrot, with some croutons and a sesame ginger dressing.

    Tonight - Grilled chicken fajitas with grilled zucchini, bell pepper, and red onion, on WW tortillas, with light sour cream and salsa

    Tomorrow - Grilled beef skewers, whole wheat couscous cooked up with some bell pepper, zucchini, and red onion thrown in (I'll cook them tonight and save a small amount to toss in), roasted asparagus

    Thursday - Frittata with lots of spring veggies (broccoli, bell pepper, zucchini, etc) and chicken sausage, side salad

    Friday - Turkey burgers on WW english muffins, side salad

  • My husband and 2 boys are off skiing for the week, so I only have to cook for myself! Tonight, I'm going to get my pseudo-pasta fix. I take tofu sherataki noodles and heat it with with 3 oz chicken, green peppers and onions. My pasta sauce is made of tomato paste and italian / garlic seasonings and I top it all off with light sprinkle of parmesan cheese. Yum! A big bowl for about 350 calories.
  • I made homemade lowfat cream of muchroom soup.Very delish.Night before I took boneless skinless chk breasts put bag of mixed veggies on top.covered with can of cream of much soup (healthy choice) and then used boc of whole wheat stove top stuffing (cook as directed) and covered soup with whole box.Bake for 40 min.Whole fam loved.
  • I am forcing myself to make healthy food that is REAL food. If it seems like diet food it is completely unacceptable. Otherwise my husband and I will never be able to stick with this permanently. I am trying to do this by limiting unnecessary fat, increasing veggie count, creative / liberal use of spices/herbs and measuring for human sized portions.

    Tonight's dinner:

    Italian Veggie Tomato Sauce

    One can whole tomatoes
    One can tomato paste
    Small Zucchini fine chopped
    half leek
    one big handful baby spinach
    garlic clove
    bell pepper fine chopped
    one cup low salt chicken broth
    Fresh or dried Basil, oregano and parsley to taste.
    Seasoned salt to taste.

    spray small sauce pot with PAM. Saute garlic and leeks till soft. Add in peppers and zucchini, saute till soft, add spinach, saute till wilted. Add in tomatoes being sure to break up whole tomatoes. Add in herbs, simmer 5 mins. adjust seasoning, simmer for another 10 mins very low.

    Makes 4 generous servings at about 100 calories each. This can be put on almost anything you'd like to put tomato sauce on.

    Chicken Parmiginish (per serving)

    One Serving of Italian Veggie Tomato Sauce
    One chicken breast
    One slice low fat Provolone
    One serving whole grain spaghetti

    Grill chicken breast on foreman grill or under broiler. Once almost done (I use a meat thermometer) put on one slice of cheese. Once cheese is melty and golden plate chicken. Next to it put one serving of whole grain pasta, smother with your serving of sauce.

    Each serving is about 450-550 calories depending on size of chicken breast.

    Last night was grilled chicken seasoned with dill and garlic, baked potatoes with fat free sour cream and roasted asparagus.

    Tonight is grilled chicken sandwiches. Grill the chicken with a little cajun seasoning, grilled pineapple and yellow mustard on a light whole wheat bun. To go with that we have roasted sweet potatoes and a salad.

    Thurs. - Homemade pizza, this is made with a whole wheat flour. We make one thin crust with white cheese and spinach. The other is BBQ chicken with cheddar and purple onions.

    I have 3 teen girls so they take turns cooking and coming up with what to make. We always make sure it is healthy so that they will take this way of cooking with them when they become adults. To me that is the most important part. We love trying new things.

    Our Ceviche!

    1 bag of pre cooked, de-veined, tail off, small shrimp
    1/2 white onion, diced
    3 roma tomatoes, diced
    1/2 bunch of cilantro, chopped
    2 avacados, diced
    Zest of 1 lime
    Juice of 2 limes
    1 teaspoon black pepper
    1 teaspoon salt (optional)
    1 jalepeno, diced (optional)

    My husband says this is not true ceviche, its his version, and more of a shrimp pico de gallo, with added lime juice! Hope you enjoy!
