Default Chicken for Dinner Tonight

Okay so I was watching Rachel Ray today and she made chicken and Sweet Potato Fry's. First off she kept saying that the Sweet Potato Fry's are so healthy, are they? I mean I guess they are because they are a vegetable and if I bake them instead of fry them that would be good vegetable with chicken correct. I just feel like since it says fry's in it, it seems like a awful choice but I looked it up on www.Caloriecount.about.com and it says that for a medium size Sweet Potato there is about 165 calories and it is full of vitamins and healthy things for your diet.

Also does anyone have any healthy chicken recipes. I always just salt pepper and sometimes lemon pepper my chicken. We need a change up in chicken flavor anyone got a great recipe that could share for baked chicken.

I'm new the the calorie counting thing but one of my familys favorite chicken recipes is to very lightly coat the chicken in ranch dressing (FF or LF works too), put in a baking dish and cover with salsa and bake. You can add some shredded cheese if you want while it's baking too just a sprinkle to top it all off.

I have also coated chicken in olive oil and tossed it in a bag with italian dressing mix then baked it and it's pretty good too.

When we have fries I always make oven baked homemade fries, I figure I'd rather have homemade than processed or deep fried french fries

My mom always made what she said was a Weight Watchers recipe for chicken and cabbage. Adapt it any way you like:

chunk up 1/4-1/2 head of cabbage (depends on how much you love this cabbage) in bottom of casserole dish, place chicken breasts on top, pour over it a mixture of 1/3 cup vinegar mixed with salt, pepper, sugar or sugar substitute, and water. I mix mine in a 2 cup measuring cup and add the vinegar and seasonings, then the water to the 2 cup line and use only 1/8 cup of splenda for the sweetner. I use frozen boneless skinless chicken breasts and cook it with the lid or foil on tight for about 45 minutes at 350.

Others may know better how to gauge measurements and cooking times, but this works for me.

It gives a great slightly tangy cabbage side dish and a flavorful chicken.

My mom always called this sweet and sour chicken, so I was disappointed when I got to college and ordered Chinese take out one night and got deep fried chicken nuggets.

mtnheart, that sounds great. I'll have to try it. I have half a cabbage in the fridge now. Sounds like it would make a good (and wonderful smelling) crock pot dish too.

My favorite baked chicken is pretty simple. Just wash it and pat dry, and then carefully stuff fresh chopped thyme under the skin as far as you can reach in the breast and leg areas and anywhere you can shove it in. Try to spread it out a little. I use about 1/2 cup fresh chopped thyme (I make sure I always have thyme in my garden). It makes the whole house smell fabulous and gives your chicken a wonderful aroma and flavor.

Now that I don't bake whole chickens any more, I will have to resort to slicing my skinless chicken breasts and stuffing the thyme inside them and baking them.

Is there a special way to prep the sweet potato fries? I might try that, although I'm not real fond of sweet potatoes.

Sweet Potato Fry's- I read online to soak the potato for 30 min then cut them into slices. Dry them completely and then put them on baking sheet for 45 min or until crispy.

I don't soak my sweet potatoes. I just scrub the skin and slice it. I spray with cooking oil and season (salt, pepper, garlic, cumin and/or mustard). I spread them out over a cookie sheet and bake at 350 for about 15-20 minutes (I just watch them). If you prefer them extra crispy, throw them in the broiler for a couple of minutes (but watch very closely!).

I looked up a recipe, and this sounds good. Spray lightly with olive oil and sprinkle with one tsp of this seasoning mix per potato. The seasonings are blended in a mortar and pestle or spice grinder first. The potato fries are sprayed lightly with olive oil and then sprinkled with seasoning and roasted 30-40 minutes at 425° to 450° (depending on how crisp you want them) and turn them every ten minutes. Spread in single layer on non-stick cookie sheet. Lightly brown when done.

I love the spice mix...I'll have to give this a shot. The garlic and cumin sounds good too. Maybe I'll do half and half and see which I like better.

In the recipe, they tossed the fries with a tbsp olive oil and 1 tsp spice mix with the fries, but I don't want to use that much oil, so I'll try the spray and sprinkle instead.

We just had Hoisin Glazed Chicken Breast for dinner and it was really yummy and easy to make...

Olive oil spray
4 Chicken breasts, trimmed of fat and pounded to 3/4" thick
1 tsp garlic powder
Salt and Pepper to taste
1/4 Hoisin Sauce

Preheat broiler and line a small baking sheet with aluminum foil. Spray lightly with olive oil.
Spray both sides of chicken lightly with olive oil, season evenly with garlic powder, salt and pepper. Broil about 3" from heat about 3-5 mins per side. Brush each breast with about 1.5 teaspoons of sauce and broil for a 1 min longer. Turn chicken and brush with sauce, put back in broiler for 1 min more.

Kayhm, I eat sweet potatoes all the time. I boil them or bake them and them mash them up with my 5 calorie butter and some cinnamon. Sometimes I will put one shot of my sugar-free Starbucks syrup on the top. They are deelish. Be sure to leave the skin on.

Mmmm... Sweet potatoes... A staple in my diet. I need to try making sweet potato fries. I could use cooking spray and seasonings and bake them. I think my husband and son would also like them.

My usual way to cook chicken is to heat my oven to 350. Put nonstick foil on a baking sheet and spray with cooking spray. Season the bottom of the chicken with seasoned salt a little pepper and paprika. Sometimes I add garlic or onion powder or put on some lemon juice before the seasonings. Then I spray with cooking spray, flip and repeat, then bake until it is done. It tastes really yummy. Even the guys like it. It is also yummy seasoned this way and grilled on an outdoor or counter top grill.
