Today, We are having Pork Tenderloin, Sweet Potatoes, and Broccoli / Cauliflower blend. Tomorrow unsure, it may be a HC Steamer, as I won't get home until very late.

Mandalinn, Congratulations on your new Home.

All of the meals on here sound deliscious. I am really enjoying this thread.

Mandalinn, good luck in your new house. I hope you and your family make many happy memories there.

Yesterday – spicy shredded chicken tamale pie with black beans and jalapenos, and topped with a healthy cornbread recipe I got on the web. (This recipe needs some work – first time I made it. It sounded better in theory than it came out in practice. lol)

Today – shepherd’s pie – 95% lean ground beef with leeks, shallots, carrots, parsnips, peas and corn topped with smashed baby butter potatoes. My hubby has this pie craving thing going on lately so I’m indulging him.

Tomorrow – whole wheat pizza with smoked mozzarella, roasted red peppers, artichokes and black olives. I just realized as I’m writing this that a pizza is a pie, too!

Wednesday – Sweet Potato and Apple whole grain pancakes.

Thursday – Greek chicken with tomatoes, feta, black olives and whole grain pasta.

Friday - Blackened salmon caesar salad.

eilla, and Annie,

I would be very interested in these recipes also. They both sound so yummy. A PM would be great if you don't mind.
