Default Menu ideas

My son and new daughter in law are coming for dinner tonight. My youngest daughter and her boyfriend will be here along with me and hubby.My son and his new bride and daughters boyfriend are all catholic. I usually make a chicken dish when my son and his wife are here, she doesnt eat pork of beef. With this being lent I am having trouble planning a meal. I thought about calling in pizza and getting a cheese and a veggie but i know I will have a hard time not over eating. Plus hubby hates pizza. I have thought about buying fish but i called and it is not affordable. any ideas??

Maybe a veggie soup and breads. Are you sure the fish is too expensive? We buy fish from the grocery store and oven bake it. Very good and affordable.

eggplant or chicken parmigiana...you can make a low fat version of it...and with basil it is really good...and you can have salad and garlic bread too

Did someone give up chicken for lent? Why can't you do chicken?

I love love LOVE making chicken. My favorite is to marinate some chicken breasts in a honey dijon type sauce, lay out in a pan, top each piece of chicken with half a slice of center-cut bacon (I can't stand turkey bacon, but center-cut has 40% less fat than regular), bake for 30 minutes, then top with thin sliced Swiss cheese and bake for another 10. LOVE it, and so does the non-dieting fiance!

~veggie soups (vegetarian split pea or lentil, vegetable minestrone, etc.)

~vegetarian lasagna (made with ff or lf cheeses and ww noodles)

~tuna noodle casserole

~salmon patties made with canned salmon

~pasta primavera (ww pasta with lots of veggies)

~homemade macaroni and cheese (I know this can be high fat, but you could tweak it a bit)

~quiche and salad (you could make one crustless and one with crust)

~vegetarian baked beans with rice and salad or spicy red beans and rice

~polenta with lots of toppings (cheese, sauteed mushrooms, other cooked veggies, meat for those who eat it, etc.)

A couple of websites to check out would be the Vegetarian Times site and there is a blog called fat-free vegan that has good looking recipes too. Just google those. Or just google vegetarian recipes and see what comes up.

Thanks for the ideas. My son ended up bringing mushroom pizza. I ate 2 slices. Hubby didnt eat any as he hates pizza.
Being catholic means eating NO Meat except seafood on fridays during lent.
My mom is reading a book about how if we ate what God gave us that we would be healthier and thinner. Im borrowing the book when she finishes it.
I went to the store and they didnt have any fish that looked good. I was going to go that route and bake it with lemon pepper .
Thanks again for all the idea and i will be using them the next few weeks.

My grandmother made a great simple tomato sauce with golden raisins and cod, trying to remove the cod before it crumbles to pieces. The result is a nice, sweet sauce. We'd have it at Christmas.
