~veggie soups (vegetarian split pea or lentil, vegetable minestrone, etc.)
~vegetarian lasagna (made with ff or lf cheeses and ww noodles)
~tuna noodle casserole
~salmon patties made with canned salmon
~pasta primavera (ww pasta with lots of veggies)
~homemade macaroni and cheese (I know this can be high fat, but you could tweak it a bit)
~quiche and salad (you could make one crustless and one with crust)
~vegetarian baked beans with rice and salad or spicy red beans and rice
~polenta with lots of toppings (cheese, sauteed mushrooms, other cooked veggies, meat for those who eat it, etc.)
A couple of websites to check out would be the Vegetarian Times site and there is a blog called fat-free vegan that has good looking recipes too. Just google those. Or just google vegetarian recipes and see what comes up.
