Default If you love pancakes like I do, try these!

Protein pancakes:

1/2 cup Quaker Old Fashioned oatmeal (uncooked)
1/2 cup cottage cheese (I used one container of Breakstone's Liv Active CC)
5 egg whites (or 2 wholes + 1 white- this is what I used )
1 tsp. vanilla extract
2 tsp sugar (you can use a sugar substitute if you wish, I didn't)

optional: cinnamon to taste (I didn't add it to mine as I don't care for cinnamon on my pancakes)

Mix all ingredients in a blender. Cook on griddle just like regular pancakes.

This recipe is suppose to make 4 pancakes, but I somehow got five out of this recipe.

Anyhow, using the ingredients I used, it came to 88 calories per pancake (remember, I got five thin pancakes out of this recipe) and 6 grams of protein.

I added 1/4 tsp. Smart Balance (4 calories) and 1/2 tsp of Log Cabin regular maple syrup (9 calories) for a total of 101 calories. Believe it or not, I didn't need more than a half a teaspoon of syrup on this pancake. They were delicious, and tasted just like regular pancakes! My youngest daughter and her friend loved them and want them for breakfast tommorrow morning.

I made a boo boo in our favor - each pancake (5 in all) is 88 calories, not 92. Corrected in the original post. Sorry about that.

I like pancakes from time to time, so I have to try that as well.

But I just have a question... I've never known where to ask it, so here might be just the appropriate place: what do people do with the egg yolks?? (Every "diet" recipe that mentions using the whites only makes me wonder about that.) Is there any kind of good food we can use them for, or shall I just throw them away? The only times I eat eggs, they're either hard-boiled, or it's for baking (which I try to avoid), so I honestly have no idea...

I know you can buy just egg whites, they'd be next to the Eggbeaters, and usually somewhere near yogurt and milk.

I just use Eggbeaters, which are pretty much egg whites dyed yellow. The dye helps fool my mind into thinking they are "real".

I hate wasting the yolks too. I buy the cartons of 100% egg whites and use those, for the most part. Read the labels--lots of those 'egg whites' have tons of other, random, chemical ingredients in them. I also keep organic, free range, vegetarian, local farm eggs on hand too; when I eat a yolk, I want it to be a really, really yummy yolk.

I've made these several times, but I don't add the sweetener--they're good without it. Besides, often people put toppings on pancakes so there really isn't a need for the sweetener. I've been thinking of making a big batch of these and then storing them in the fridge so all I have to do is toast or nuke one for a fast snack or breakfast. Best of all, these are high in protein!

I love these pancakes. I do equal amounts of the oatmeal, cottage cheese and egg whites, with a litlle splenda and a little vanilla. I usually use at least a cup each, which for me translates into 3 servings.

Allison, I did try cooking a batch and heating them up. They weren't bad, although they didn't reheat as well as traditional pancakes. However, I almost always have the batter whipped up in the refrigerator to cook when I need them. I usually have to add a little water by the second day, but they turn out great.

Something I do, is to take sugar free syrup, which I don't care for by itself. SImmer it on the stove with some berries (raspberries are my fave) and it's heavenly.

I just buy eggs and throw out the yolks. Seems it may be cheaper than buying just the whites -- especially as I DO use whole eggs too...

Yeah, I pretty much just dump them down the sink. It almost makes my skin crawl, it's so wasteful. Then I got Egg Beaters.

Hm, I will look for those Eggbeaters things (well, the closest equivalent we have here, that is), but I've never heard about that, so I have no idea if my local supermarkets will have those. Oh well, at the worst I'll throw the yolks away then. ^_^;

If you have a place where you can set them outside for birds, egg yolks are really good for them (all that protein). Scramble the yolks before setting them out and maybe set out a little bird seed with them.

These sound quite good. I've been looking for something new for breakfast and for lunch on the go.

I've gotta ask you folks this question - are they filling? And if yes, how many do you need to eat in order for it to fill you? Thanks.

Robin, yes, very very filling to me. Lots more filling than cereal or even oatmeal to me. I think it's all the protein from the egg whites and the cottage cheese. I eat three (average sized?) pancakes. I use 1/3 cup of each ingredient to make 3 pancakes. My calorie count (I use fat free cottage cheese) is 190 calories for all 3 pancakes.
