Default Creamy yet Crazy-Fluffy Scrambled Eggs w/ Cream cheese

I once saw Rachael Ray recommending cream cheese in your scrambled eggs, so I tried it today. It was Yum-o as Miss Ray would say. And it's very quick and easy yet doesn't have the same old boring taste of regular scrambled eggs.

Serves one.

2 eggs
2 teaspoons fat free milk
2 tablespoons cream cheese
salt and pepper to taste
Smart balance, half tablespoon or to your liking

Scramble the eggs, milk, cream cheese and salt and pepper in a bowl. In the meanwhile, heat the smart balance til it's melted over medium heat. Turn the heat down to medium low, and pour the eggs in. Stir constantly until thick and fluffy yet creamy scrambled eggs have formed. Serve and enjoy.

A variant on this that I was thinking of was sauteeing onions and garlic and adding it to the scrambled egg and cream cheese mixture, and chop up a bit of parsley to throw in as well. I think it'd be superb!

I started adding cream cheese to my scrambled eggs a couple of years ago, and now its the only way I'll eat them! It's really good with flavored lf cream cheese like the chive and onion!

This was very good. Not only were the eggs fluffy but they were so moist.

I am a huge eggs & cheese person, but never ever thought to use cream cheese. Tried these today and they were great! Thanks for the idea

Oh, cream cheese eggs! Where have you been all my life!!

Best breakfast I've had in quite a while. I think in Phase II I'm going to try it on a ww tortilla

It's really cool to see that 2 years after posting the recipe, people are still trying it. It's such a simple yet delicious recipe.
