I love poppy seeds. Does anyone have a good recipe for any type of poppy seed muffins that you have tried and could recomend. Thanks a bunch

Lemon-Poppy Seed Muffins

Recipe By :Cooking Light, Mar/Apr 1993, page 80
Serving Size : 12 Preparation Time :0:06

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 3/4 cups all-purpose flour
7 1/3 tablespoons sugar
5 teaspoons poppy seeds
2 teaspoons baking powder
1/4 teaspoon salt
1 cup skim milk
3 tablespoons vegetable oil
1 tablespoon grated lemon rind
1 tablespoon fresh lemon juice
1 egg -- lightly beaten
Vegetable cooking spray

Combine first 5 ingredients in a large bowl; make a well in the center of mixture. Combine milk and next 4 ingredients; stir well. Add to dry ingredients, stirring just until moistened.

Divide batter evenly among 12 muffin cups coated with cooking spray. Bake at 400 deg for 25 minutes or until golden. Remove from pans immediately; let cool on a wire rack. Yield: 1 dozen (serving size: 1 muffin).

Orange Poppy Seed Cake

Amount Measure Ingredient -- Preparation Method

1 white cake mix, low calorie
2 tablespoons poppy seeds
6 ounces orange juice
3/4 cup egg substitute
1/3 cup water
2 teaspoons almond extract
3/4 cup light sour cream
1/2 teaspoon cinnamon
2 tablespoons sugar

Combine all ingredients except cinnamon and sugar and beat with electric mixer 2 minutes.

Spray bundt pan with cooking spray.

Combine sugar and cinnamon and sprinkle evenly over inside
of pan.

Pour in cake batter and bake at 350 degrees for 45 minutes.

Lemon Poppy Seed Bread - 3 Points

**Bread**
2 cups all-purpose flour
2 tablespoons poppy seeds
1 tablespoon baking powder
1/4 teaspoon salt
1/3 cup move Over Butter 65% vegetable oil spread
3/4 cup sugar
3/4 cup skim milk
1/4 cup lemon juice
1/4 cup Egg Beaters 99% egg substitute
1 tablespoon lemon zest
**Glaze**
3/4 cup powdered sugar
1 tablespoon lemon juice
1 tablespoon lemon zest

1. Preheat oven to 350 degrees F.
2. In a small bowl, combine flour, poppy seeds, baking powder and salt. Set aside. In a mixing bowl, bream margarine and sugar together. Add milk, lemon juice, egg beater,and lemon zest. Mix until combined. Add flour mixture and stir just until moistened. Do not over mix.
3. Pour into lightly greased loaf pan. Bake (65 - 75 minutes... not certain of time!) or until cake tester inserted in center comes out clean. Allow to cool for 10 minutes in pan. Remove bread and pour glaze over top of bread, allowing glaze to run down sides. Cool completely on cooling rack before slicing.

* The original recipe called for the 2nd paragraph of this recipe to read: "Pour into a lightly greased Bread Crock. Bake 65-75 minutes or until Cake Tester inserted in center comes out clean. Allow to cool 10 minutes in Bread Crock. Remove bread and pour glaze over top of bread, allowing glaze to run down sides. Cool completely on Non-Stick Cooling Rack before slicing with Serrated Bread Knife". Yield: 1 loaf, approx. 16 slices.

Poppy Seed-Honey Dressing - 1 Point

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 ripe medium banana -- sliced
1/2 cup plain yogurt
1 tablespoon honey -- plus
1/2 teaspoon honey
1/2 teaspoon poppy seeds
1/2 teaspoon fresh lime juice

This dressing is delicious over fruit salad.

1. In work bowl of food processor or in blender container, combine all ingredients; process until smooth. Chill at least 1/2 hour before serving. Makes 4 servings, about 3 tablespoons per serving.

Serving Size (3 tablespoons)
