DH and I give two thumbs up for the artichoke and sun dried chicken. i had a side of steamed broccoli with mine and DH had some brown rice.

mmm...mmm...good

i'd love to try the pannini but i'm afraid of the calories. good bread + goat cheese = to die for

I have a very special Memorial Day this year: I am graduating with my B.A.! So, I am actually having a graduation party next Saturday. The menu is a hybrid of healthy and not so healthy:

Jamaican Jerk Chicken skewers (healthy)
Chicken Satay skewers (healthy)
bbq ribs
chicken wings oriental
pasta salad
fancy garden salad (healthy)
*possibly* a cake of some sort if I have time to make it. Here is a recipe for the jerk chicken skewers, which are healthy (this recipe is for the whole breasts, just cut them into chunks for skewers):

Jamaican Jerk Chicken

6 green onions, chopped
1 onion, chopped
1 jalapeno pepper, seeded and minced
3/4 cup soy sauce, low sodium
1/2 cup white vinegar
1/4 cup vegetable oil (could reduce this if you wanted)
2 tablespoons brown sugar
1 tablespoon fresh thyme, chopped
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1 1/2 pounds skinless boneless chicken breast

In a food processor or blender, combine the green onions, onion, jalapeno pepper, soy sauce, vinegar, vegetable oil, brown sugar, thyme, cloves, nutmeg and allspice. Mix for about 15 seconds.

Place the chicken in a medium bowl, and coat with the marinade. Refrigerate for 4 to 6 hours, or overnight.

Preheat grill for high heat.

Lightly oil grill grate. Cook chicken on the prepared grill 6 to 8 minutes, until juices run clear.

For 5 oz of chicken (raw), the nutritional info is:
260 cals, 9g fat, 628mg sodium, 10g carbs, 34g protein

I have a tofu chocolate cake recipe I have been looking for for my birthday. If I find it I will post it! Last time I made it was for my birthday a few years ago. Very moist!

Cake with tofu? Hmmm sounds very interesting. I love tofu (being an asian, I really never thought twice about it... :P) but never thought of making a cake with it.

Ok Veggie lovers...here is a pic of the artichoke chicken dish from the recipe Trooworld posted. We enjoyed it! I served it over 1/2 cup brown rice with a big side salad for me. I used Trader Joe's Sundried Tomato Pesto. I also sauteed 1/2 of an onion before I put the chicken in the pan as my tomatoes were just plain with spices. Turned out great! I recommend it!

Here's a really good chocolate silk pie recipe that is cholesterol-free, vegan and has tofu!

9” Graham cracker crust (chocolate or plain)
12 oz vegan chocolate semi-sweet pieces (Trader Joe's makes accidentally vegan ones)
2 packages silken tofu
3 TB maple syrup OR Caramel flavored syrup (this makes it even yummier!)

Melt chocolate. I like to use a double boiler.

Place tofu in food processor until smooth. Add melted chocolate, syrup and process.

Pour into the crust.

Refrigerate for at least an hour to firm up, or put it in the freezer if you can't wait!

Found it!

Tofu Frosted Chocolate Cake
1 pkg choc cake mix
10.5 oz silken tofu
3 tbsp sugar
3 tbsp cocoa
1 tsp margarine

Prepare cake mix according to pkg directions substituting 1/3 cup tofu for one egg. Pour batter into 8" square pan and bake 25-30 min at 350F or as directed on pkg.

Frosting: Blend remaining tofu (1cup) with sugar, cocoa, and margarine until smooth. Spread cooled cake with frosting. Store uneaten portions in refrigerator. Serves 16

Nutrient analysis per serving
108 cal 15g carbs
2g protein 5g fat

Oh, love the tofu cakes! I have made something kinda similar, but these both look great! Thanks Soul and Julia for sharing!

Has anyone tried the cake mix with canned pumpkin recipe? Or brownie mix with one can of water and pureed black beans? I have tried neither and I'd like a review before I do. Not sure I want to spend my calories on those....

Now real brownies on the other hand....;)

I wasn't very creative with my artichokes just added them to chicken salad which I do often. I think tonight I'm gonna make my grilled eggplant recipe (after I go to the store of course!). Do we have the next veggie picked out?

The tofu recipes look yummy! I'll have to try em out and see if the hubby can tell the difference.

I SWEAR that people won't know the chocolate silk pie is tofu based!!! It is even better with cream cheese added (I use vegan kind).

How about using bok choy as the next vegetable? It's not that unusual, so people probably can find it (I hope). Otherwise, what about collard greens or kale? :)

Bok choy sounds good to me! Someone also suggested leeks be added to the list...just throwing that into the lineup as well.
