Manick - That looks SO good!! Of course . . . I want to add some low fat feta or goat cheese!! :)

Tara - is the oatmeal cooked or raw?

One of the good things about my kids visiting WOSF (waste-of-skin-father) is that I can cook ANYTHING and nobody will complain!!

Oh you must TRY these stuffed peppers...they are simply wonderful! Normally I reduce the amount of oil in a recipe, but this time I did not, I followed this exactly. It was scrumptious! I used sweet orange "sungold" tomatoes and red cherry tomatoes and a walla walla sweet onion and fresh basil from the garden.

gg: Oatmeal is raw, I use the old fashioned one.. So filling and yummy. :)

Cheree - The only vegetarian cookbook I've ever purchased is "The New Laurel's Kitchen." It's by Laurel Robertson and Carol Flinders.

Laurel wrote the BEST book about baking bread ever published, IMHO. I love the way she describes ingredients and flavors. That's why I bought her regular vegetarian cookbook.

Anywho . . . I never got into the "Laurel's Kitchen" book. There's a ton of information about being a vegetarian and lots of different recipes with lentils, squash, grains and tofu. If you see it online and are interested I'll send you my copy! :)

ggmugsy - thanks for the suggestion regarding Laurel's Kitchen book. I just checked and our local library has a copy, so I'm going to check it out.

If you or anyone can also recommend cookbooks that are good for cooking vegetables, that would be great too. Thanks again!!!

Manick: that recipe sounds fabulous. Red peppers and cherry tomatoes each have such wonderfully bright flavors, I am definitely trying this one.

Cheree: I can't suggest a cookbook, but I can suggest a website. Maybe you already know about it, but do a google search for allrecipes...it's all one word. I would post the link but it would probably be removed. Anyway, I get most of my recipes from that website. There is something for everyone. And they have a healthy cooking section. I bet Soulbliss could recommend a good veggie cookbook, hey Soul, where are you?

Tonight I made "potato" salad. Some where on another thread they talked about using cauliflower instead of taters. So this is what I did.

1 head cauliflower - steamed
1 yellow pepper
1 red pepper
1/2 red onion
1/2 cucumber
Fresh parsley
Enough mayo to make moist but not gooey.
Salt & Pepper to taste.
I loved it kids not so much but oh well they dont have much choice. Forgot to take a pictrue b4 serving

Julia: the South Beach Diet cookbook does these faux "mashed potatoes" with cauliflower. I've had something similar in the past and it is fabulous. Your salad sounds yummy!

ggmugsy - I checked out "The New Laurel's Kitchen" from the library and I really like it! It is packed with a lot of great info, thank you for suggesting it! I hope that she updates this one, but I'm sure it would take a lot of week to do so...it has a lot of great recipes in it too.

trooworld - Thank you for your recommendation regarding allrecipes. I had forgotten about that website and their healthy cooking area!
