Not on atkins, but a while back I made some 'crackers' out of string cheese. Cut up a sting cheese into 4ths or 8ths and put into a muffin tin and bake for 3-4 minutes.
If you have a favorite pita bread, you can easily make chips by tearing up the pita bread and baking it for about 6 minutes. I do this sometimes to reduce oil and sodium.
