What are your favourite, easy quick meals?

  • I have a few ideas from when I was on Atkins before, but I'm looking for some more ideas. I have a newborn so anything I can pre prep in the morning or make quickly later in the day is great.

    What are some of your breakfast/lunch/dinner meals that are easy?
  • On a piece of foil, place a salmon fillet and a bunch of asparagus. salt and pepper them, and then cover in lemon juice. Roll the foil loosely (so that the insides can steam) and bake at 400 for 20 minutes. INCREDIBLY healthy and delicious. I usually serve it with couscous with dried cranberries and carrots in it

    For breakfast, nothing nothing beats oatmeal. It's healthy and so so filling.
  • Quick stir fry with chicken or steak and veggies in your choice of oil.

    Hamburger patties.

    Rollups with ham or turkey, cheese, and pickle.

    Broiled chicken breast, fish, etc.

    Salads loaded with protein.

    Cabbage or zucchini lasagna.

  • Yum! I forgot about roll ups. I used to do meat, cheese, and use a piece of lettuce to hold it all together. That was one of my favourite lunches.
  • I love ground beef on top of romaine lettuce with a spoon of sour cream and salsa on top. Sometimes cheese if I want to dress it up. I could eat that everyday!
  • I've recently tried baking an egg into a carved out avocado half. Delicious, simple, and induction friendly.
  • I brown about 1 pound ground beef with some seasonings (garlic powder, onion powder, chili powder, italian seasonings), drain it, then add an 8 oz. package cream cheese and allow it to melt while stirring it so it makes a sauce, then add 1 can of Rotel. It is delicious and very filling. Serve with a green side salad.
  • A can of cut green beans (no sodium) topped with a can of salmon or tuna and a dollop of mayo or drizzled with a little melted butter. No cooking involved.
  • This thread is making me hungry, mmm! I especially like calee and jerseygyrls recipes.

    We have a ton of ground beef too, for Christmas the in laws bought all the kids a deep freezer and filled it with meat they got from a local farm.

  • Jerseygyrl, what is Rotel? I forget- i live in Canada..is it diced canned tomatoes? Or canned chili?

    One thing i like is Big Mac in a Bowl, mmmmm!
    For lunch everyday i have a "pancake". I have tried many recipes byt this one is my favorite
    Pancake
    1 egg
    1tbsp ground flax, ground almonds, or ground pecans
    1/2 tsp baking powder
    1 tbsp splenda
    Cinnamon or banana extract f desired

    Combine all, while waiting for a small skillet to heat on medium. Put a bit of oil in skillet, swirl around. Dump in batter. Flip after a few minutes- wait until flippable, but bubbles will not form on top like a regular pancake. I serve with butter and sugar free pancake syrup, you could also use a small amount pureed fruit n splenda, or sf jam. I double the recipe to make one jumbo pancake. So filling!

    Also, the crackslaw works in a pinch (saute a small bag of coleslaw mix with choice of meat, usually used scramblefried hamburger.)

    I tried this and it was great! I had it over Romaine and it was almost like a taco salad I did cut the cream cheese in half and add some shredded cheddar. Thanks for the idea!

    For breakfast I just do two ham slices rolled up around a mozzarella stick and nuke it for 30 seconds. I dip two of those roll ups in a mayo/mustard mixture.

  • An easy egg, cheese, and ham quiche (crustless of course) in a pie pan. Lasts for a few days and is really yummy.
