Default Freeze Cheesecake Muffins?

Has anyone tried freezing the cheesecake muffins? I don't really want a dozen at once, but I don't want to ruin them by freezing...it seems that I could wrap each one individually in plastic wrap, tie it off, and then put them in a big ziplock freezer bag.

Suggestions? Comments?

Hm. I have frozen a pre-Atkins cheesecake and it remained delicious... But some of the kind of fakey cheesecakes might not freeze so well. I think this is because of the gelatin.

I am not sure what your ingredients are - but if it's eggs/cream cheese/splenda, I'd say go for it. If it's cream cheese/gelatin/splenda, I wouldn't - freezing will cause some of the water to separate from the gelatin and I think you'll have a bit of a runny mess when thawed.

Thanks, Abluvion. This isn't a fakey cheesecake - it's the one on my recipe thread - cream cheese, sour cream, eggs, Truvia, vanilla. I'm going to try freezing some. After all, the grocery stores are full of frozen cheesecakes, and specialty shops ship them all over the world.

Yeah, that sounds like it will freeze just fine. Only difference between that and the kind I've frozen before is the sugar sub, which hopefully won't make a difference!

Cheesecake is my weakness. I would probably have to freeze them so I wouldn't eat too many at one sitting! I'll have to try the recipe!

yes, everyone at work love when I bring in cheesecake muffins, which is what I do to keep me from eating them all!. So its a good idea to freeze them. THere was a low carb brand at the local grocers for a while. I can still find it in Toronto, where they make it, but not available in the kw area anymore. I liked in because you could buy one that had 8 slices of different flavoured cheesecakes, so lots of variety, and already sliced, so you could just have one slice and leave the rest frozen.
mmm, I may need to bake this weekend!

I found out by accident that the cheesecake muffins freeze very well. Our fridge broke, so I woke up one morning to find everything frozen over. I thawed a muffin out for about fifteen minutes before eating, and it was great. I don't recommend thawing in the microwave, though.
