  • Grilled Burgers...
    Using the fun red Patio Bistro electric grill again tonight. It's so hot, I'd much rather cook outside. I'm grilling hamburgers with garlic and black pepper to eat with left-over green bean casserole. (It's a good thing I like it...the recipe makes lots.) Maybe a few cherry tomatoes on the side.
  • "Instant" Cheeseburger Pie...
    Tonight I'm having Cheeseburger Pie and the last of the green bean casserole. Here's my Cheeseburger Pie trick: Last night I grilled three 1/4 pound burgers with garlic and black pepper. Today I took the two left-over burgers, crumbled them into a small baking dish sprayed with non-stick and proceeded with the Cheeseburger Pie recipe. I halved the ingredients - half the mayonnaise, 1 egg, and half the cheese - and made an "instant" cheeseburger pie. Super tasty! The grilled meat gave it a real "cheeseburger" taste. (I ate half for lunch and am finishing it up tonight.) I'm all about cooking short-cuts!
  • I threw a pot roast in the crock pot with tomato paste and water and cooked it on high until it was tender, drained a lot of the sauce and then added some buffalo sauce and a pinch of taco seasoning. I ate that with cheese and sour cream on top with a side of green beans.
  • This sounds really good, Linsy. I hadn't thought about pot roast "buffalo" style. I guess I should buy a crock pot; I had one years ago, but along the way, I think I gave it away or sold it at a yard sale or something. Good ideas, girl.
  • Mmm, I love buffalo. Sandy, have you ever had buffalo chicken dip? When I lived in California I had never heard of it but it's really popular over here in PA. It's usually served with tortilla chips or cheese crackers but now that I'm on Atkins I eat it with celery sticks. Here's the recipe!:
    2 8oz blocks cream cheese
    2 cans white meat canned chicken
    buffalo sauce to taste (I usually use around half a regular sized bottle, or a cup--use less if you don't like it too spicy)
    ranch to taste (about 1/2c)
    Drain chicken, chop up really well in the bottom of a sauce pan on low heat. add buffalo sauce and stir well until warmed through. Soften cream cheese and add to chicken and buffalo sauce mixture. Stir well, it will be an orange color and creamy. Add ranch dressing and taste. Add more buffalo sauce/ranch to taste (it should be slightly spicy, very creamy with a good buffalo flavor. Not too much ranch). Transfer to a crock pot or baking dish and cook until hot and bubbly (about 20 minutes in a 350 degree oven). Eat with celery stalks, or even with a spoon. I have a friend who also adds cheddar cheese. Be careful, it's addicting.

  • Fresh Asparagus...
    I'm having fresh asparagus roasted in olive oil and sea salt with baked pecan-crusted chicken tenders. I'm so hungry - too long between lunch and dinner tonight!

    I'm so hungry I'm going to dip the chicken tenders in bleu cheese dressing for extra deliciousness!
  • I had grilled chuck roast smothered with onions and mushrooms and a double order of green beans at cracker barrel. Delicious!
  • Linsy, your dinner sounds amazing. Good job at the super-carby Cracker Barrel!
  • Ribeyes on the Grill...
    Tonight I'm grilling a huge ribeye I found on sale. I'm sauteeing fresh asparagus in olive oil and garlic for my veggie.
  • Last nights dinner was a little carbier than I'd like but I was craving soup during the rain, specifically broccoli cheese soup so I threw this together:
    2 bunches broccoli, chopped
    16oz chicken stock
    1 block velveeta
    1/2c heavy cream
    8oz cream cheese
    Simmer broccoli and chicken stock until broccoli is tender. Stir in each (softened) ingredient one at a time. Heat through until everything is hot and blended.
    So good. This is on the heavier side of calories and carbs however so be careful. It makes a ton of soup.
  • Philly Cheese Steak
    Last night I made myself an Atkins Philly Cheese Steak. They're making a movie down the street, and those street vendors were killing me, so I made my own version. I'll post my recipe in "Recipes from 'What's for Dinner?'" It was really good and stopped the food vendor craving.
  • Quick Chicken Casserole...
    I feel as if my dinners have been sort of plain and boring. The truth is although I think I'm a good cook, I don't enjoy the prep work or the clean-up. I do like to eat, though. It's hard to get motivated to cook for one unless there's something I really want.

    Tonight I turned my homemade chicken salad into chicken casserole by adding a little shredded cheddar (of course I added cheese!) and baking it until hot and bubbly in a small ramekin. It's good and feels like dinner. I may eat some veggies/a salad later.

    I am thinking the Atkins people have gone away. But reading your other post, I had to come in here to see recipes. Gosh some sound really good! Buffalo Chicken dip... or baked in oven sounds yummy..

    I went to Outback with my parents and had grilled shrimp and a filet Yummo!! Was good when they passed the FF and the bread in front of my nose. LOL

    I am pretty boring with my meals. Eggs, cheese and Sausage in am, then Turkey heated with melted Cheddar cheese for lunch. Dinner is any kind of meat (taco meat) (grilled Mrs Dash Chipotle Chicken) (Turkey) on Romaine with HB egg and any bacon I have in the fridge (Ranch D too) and that about it. I did make up a Cream Cheese with Baking Cocoa and splenda concoction that is only 1 carb per Tablespoon.. Satisfys the Choc craving.

    I will post in here if I make anything new tho and will read what you are doing
