I have a sausage, egg and cheese casserole in the oven. I'll probably eat a square for lunch and a square for dinner. It's made a bit like a quiche but much heavier.
I took 1lb of sausage, about 5-6oz cheese (shredded very fine), 7 eggs and some "splashes" of heavy cream. Crumble the sausage in a skillet, brown and drain it, and then put it in the bottom of a casserole dish. Layer the cheese evenly over the sausage. Beat eggs, cream, and pepper in a bowl and then pour over the sausage and cheese. Bake until eggs are completely set. I have mine in at 375 right now because I didn't really know what to bake it at.
I made something similar on Christmas morning and it was a hit with the family. It's great for an easy reheat-able meal that is low in carbs.

. When you look at this dish, it seems really heavy, but its actually not that bad. The majority of the dish is actually veggies.
