Question My menu for Tuesday (Can someone see if this looks right?)

I am on my second week of induction. I am trying to make up my menu for the week. I am not really good at doing this. So, I would love for someone to look at it for me. Any suggestions would be helpful?

Breakfast

Muffin (egg & 1/4 cup flax seed & sweetener) (1 to 2 carbs depending on sweetener)
Decaf coffee w/ splenda & cream (1 carb)

Snack

Cheese stick (1 carb)

Lunch

Salad- Lettuce (1cup) bacon bits, cheese
Chicken Salad (egg & mayonnaise)

Snack

Pork rinds

Dinner
Broccoli Salad (1 cup)
Baked Tilapia

I will try to add the rest of my week in a minutes.

Okay, here is the rest of my menu through Friday

Wednesday 2/4/09

Breakfast
2 eggs
Deer sausage

Snack
Pepperoni

Lunch
Brocolli Salad (1 cup)
Tilapia


Snack
Cheese stick

Dinner
Fried chicken (chicken breast fried in veg oil, No breading)
Salad (Lettuce, bacon bits, cucumber, cheese, ranch dressing)



Thursday 2/5/09

Breakfast

Coffee w/ splenda & cream

Snack
Pork rinds

Lunch
Fried Chicken (chicken breast fried in veg oil, No breading)

Tuna Patties
Salad (lettuce, tomato, eggs, bacon bits, cheese, ranch dressing)


Friday 2/6/09

Cheese Crisps

Chicken Green Salad ( lettuce, tomato, eggs, bacon bits, cheese, ranch dressing)

Snack

Here is the recipe for Tuna Patties:

TUNA PATTIES
2 6-ounce cans tuna, drained
2 eggs
1/2 teaspoon celery salt
1/4 teaspoon onion powder
1/4 teaspoon pepper
2 ounces cheddar cheese, shredded
2 tablespoons parmesan cheese, 1/2 ounce
2 tablespoons oil and/or butter
Mix all of the ingredients in a small bowl; chill at least 30 minutes. Heat the oil and a little butter in a large skillet on about medium heat. Drop the tuna mixture by large spoonfuls into the hot oil. Flatten slightly and shape into patties. Fry about 3-4 minutes on each side until well-browned. Flip them very gently and brown the other side. Serve with Tartar Sauce or sauce of your choice.
Makes 2-6 servings
Can be frozen
Per 1/2 recipe: 455 Calories; 40g Fat; 42g Protein; 2g Carbohydrate; trace Dietary Fiber; 2g Net Carbs
Per 1/4 recipe: 228 Calories; 20g Fat; 21g Protein; 1g Carbohydrate; trace Dietary Fiber; 1g Net Carbs
Per 1/6 recipe: 152 Calories; 13g Fat; 14g Protein; .5g Carbohydrate; trace Dietary Fiber; .5g Net Carbs

Your menu looks ok for the most part. Be mindful of things like pork rinds & pepperoni as both contain a lot of sodium and could cause you to retain water.
Be sure you are getting lots of fats & drinking plenty of water.
