Default Broccoli and Cauliflower Cheesy Soup

This is a weight watchers recipe, and it is delicious. Can anyone help me figure out what the exchanges are for LAWL? I am not sure if 10 oz. is too much cheese. Thank you.


2 packages frozen California vegetables

1 can of Rotelle tomatoes with juice

3 cans of fat free low sodium chicken broth

10 ounces of Light Velveeta cheese

Boil vegetables in tomatoes and broth

Simmer for 45 minutes

In the meanwhile cube Velveeta

Turn off and drop in Velveeta cubes. Allow to melt and serve

1 cup is 1 point. Based on 2 cup meal.

Nicole - Here is the LA makeover...

Good day! Thank you again for submitting your recipe. Below you will find our LA Chef modifications:

Recipe Name: Broccoli and Cauliflower Cheesy Soup

Ingredients

2 ( 10 oz.) packages frozen California style vegetables
1 (16 oz.) can no added salt tomatoes with juice
3 (10 3/4 oz) cans fat free reduced sodium chicken broth
10 oz. light Velveeta® cheese


Preparation:
Place vegetables in kettle and add tomatoes and chicken broth. Simmer for approximately 45 minutes.
Cube Velveeta cheese and add to soup. Allow to melt, then serve.

Serving size:1/8 recipe
LA Exchange: 2 Vegetable, 1/2 Diary

Please remember to use this recipe in moderation while in your weight loss program for continued success.

Cassi......thank you so much. The recipe is not too different......but I would probably add a tiny bit of red pepper to it, as the spiciness of the rotelle tomatoes is what really sets off the other flavors!!!

I know you have been very busy, and I really appreciate you taking the time to submit this for me. I really feel kind of bad.....as you have paid for the online access, and we all use you.........A LOT. Is there any way any of us can return the favor to you?????
