i was JUST thinking about how my eating habits are changing-- yesterday for lunch i went out to my favorite veg indian buffet where back in the day i could clear two plates no problem-- i now get FULL from one plate and yesterday i couldn't even finish everything on my one plate (and i LOVE indian food-- i have to be seriously FULL to be done usually). in fact, i was full for the rest of the day and didn't even eat dinner.
i've also started craving fruits and i notice the more i work out, the easier it is to drink all my water...
this is one of my all-time favorite soups:
JenE & stacy's funkalicious lemon lentil soup
1 c lentils
6 c water
1 potato (peeled an cut into 1/2 inch cubes)
1 c chopped celery
1 c chopped swiss chard or mustard greens
1- 2 tb olive oil
1/4 c chopped cilantro
1/4 c chopped parsley (i don't like parsley so i've never used it)
1 heaping tb coriander
1 heaping t cumin
3+tb lemon juice (i don't think there can ever be enough lemon juice!)
few cloves of garlic- minced
salt and pepper to taste
1) rinse lentils
2) bring lentils and water to a boil in a large pot- simmer for 35 minutes
3) in a separate pan heat oil, add garlic, pepper, and potatoes- cook 2 min
4) add celery and cook 2 more minutes
5) add to lentils and broth- cook 10 minutes
6) add swiss chard (or whatever greens), coriander, cumin, and lemon juice- cook 10 minutes
7) add parsley and cilantro
8) salt (or add more lemon juice) to taste
