Default Monday Menu, February 27, 2006

The fact that there is no menu thread at 8:00 at night is a bad sign to me!

Breakfast: Farina made with skim, smart balance (points), and splenda

Lunch: Eggbeater omelet with mushroom, avocado, and salsa; 3 ounces of ham off the bone

Snack: Crustless Pumpkin Pie with FF cool whip

Dinner: Chiptole chicken bowl (pinto beans, lettuce, tomato, salsa, guacamole, chicken)

Snack: 2 WW lemon cakes (2 points) and 8 ounce skim milk

I always take for granite that someone will post the menu thread!!

Breakfast: Cream of Wheat with Splenda
Lunch: Tomatoe Soup with Skim Milk
Snack: Banana and strawberry smoothie
Dinner: Salad from Panera
Snack: Reeses PB Egg (very bad!!!)

Vickie, what is that bowl like? I was just wondering how it would be to make one at home. Are the pintos mashed up or whole? Just curious.

You could definitely make the bowl at home. It's grilled chicken cut up into small bits and marinated in chipotle adobo sauce. They tell me they use olive oil. Then you add whatever you want, kind of like Subway. The beans are whole and you can have pinto or black. I add the tomato salsa which is mild and is pretty much cut up tomatoes and some mexican spices. I also add a splash of the hot sauce which is really hot considering the chicken is already marinated in adobo sauce which has chipotle chilis in it! I like hot food. I add their guacamole which is the best I've ever had. I add lettuce which is shredded romaine (not iceberg) and if I have points I add cheese but usually I don't add it. Then I make brown rice at home in chicken broth and stir it into the bowl. They only have white rice there but it's delicious. They put the whole thing in a bowl for you.
