Default Beans

Hey guys, I am well stocked up on every Bean going, now looking for recipes. Can't say I am really thrilled on Beans, I only ever make bean soup. Any suggestions

my favorite bean dish is red beans and rice. i make mine without added fat, so it's pretty healthy:
combine in slow cooker..
1 lb washed red beans (white beans are good too)
1 med. chopped onion
2 bay leaves
2 tbsp chopped garlic
salt to taste
cayenne pepper to taste
5 c water
cook on low for 8 hours or more. check every now and then.. sometimes i need to add more water. serve with white rice and tabasco sauce

Hey Lynda,try lima beans with a touch of (should I dare say it???)butter,and salt and pepper,It's great!! I love it!! I think it may be an aquired taste though,because I am the only person I know besides my dad that likes them!!

thanks Wendy that sounds interesting I will try it. Glen I will CERTAINLY try your idea with the music, haha.

Cadwell thanks for the recipe, sounds good I am going to try it. I made a great soup this week, it had every bean I could find in the bulk store, soaked them and threw them in the crock pot with some water veggies and turkey, it was great. Sent dear hubby to work with a big bowl, he will love me later for that one, heheh!!!!

I love great northerns. SImply soak for either the long or short cooking method, then when you go to do the actual cooking, add 2 bay leaves, salt to taste and pepper. Coook until done, serve with rice if desired.


AN aunt of mine eats beans every day and adds 2-4 droplets of the liquid Beano to them while cooking. It does not change the flavor at all and really helps in the "music making" department.

Default Southwestern Chicken Soup

This recipe is a from a friend of mine and we love it. You can see I made modifications based upon our taste for less spicy foods.

Southwestern Chicken Soup
--------------------------------------------------------------------------
2 boneless, skinless chicken breasts, cooked and diced (I used the frozen grilled breasts, cooked in microwave for 2 min., then diced them)
4 cups chicken broth
1 onion, chopped
1/2 cup Pace picante sauce (or any other brand)
1 can pinto beans, drained (you could use leftover cooked pinto beans)
1 can whole kernel corn, drained (this is my own addition)
1 small can diced green chilis, drained
2 cans Rotel cilantro-lime flavored diced tomatoes (I used 1 can Mild Rotel instead and did not add the green chilis)


In a medium/large soup pot, saute the onion in a little of the chicken broth. Add the chicken broth, tomatoes, corn and beans. Cook until it reaches a rolling boil, then lower heat.
Add the green chilis and picante sauce to the soup pot. Stir thoroughly. Add the chicken, and lower the heat. Cook about 45 minutes on low. The longer it cooks, the more intense the flavor.

I love beans and eat them all the time (I'm a vegetarian 99& of the time, so they are a good protein for me).

Easy and quick:
Rinse canned beans (I use black, black-eyed peas and cannellini)
Add some cooked grain (barley, couscous, etc.)
Add chopped vegetables (celery, radish, carrot, anything crunchy)
Toss with a light vinaigrette dressing.

Chill a couple of hours. It's a very filling salad and a great lunch.

Also, you can make a basic soup with canned/drained/rinsed beans. Saute onions/garlic/celery until onion is clear (don't let the garlic burn). Add the beans and a big (28 oz) can of puree tomato. Add frozen green beans, corn, etc. Whatever kinds of spices you want.
