Default Breakfast Casserole Recipe?

Hi All,

I don't eat it often, but one of my favorite comfort foods is my mom's breakfast casserole (usually made with sausage, cheese, eggs, bisquick or bread, and cream of mushroom soup). I looked through the recipe strings and couldn't find any similar recipes. Does anyone have any ideas for how to re-create this with some IP packets? I am guessing I could use: a mushroom soup, and/or cream of broccoli soup packet; a crispy cereal (mashed), oatmeal, or pancake packet; some low-fat turkey sausage, and a mixture of eggs and egg whites. (Of course this would make enough for a few meals so I would eat it for a few days.)

Usually I am happy to experiment in the kitchen, but the packets are so expensive that I wouldn't want to screw up a multi-packet dish more than once. If some experienced IP packet recipe baker has some suggestions for me (e.g., amounts, how much water to add, approximate cooking times temperatures, etc.) I would really appreciate it.

In return I promise to post my results and any tweaks I come up with.

Thanks for the tip. I just read through that thread.

If I can't figure out how to incorporate packet "bread" and packet mushroom soup I will probably just go the frittata route.

I just made some mini quiches using 2 herb and cheese omelets, extra egg whites, veggies and the magic secret ingredient was a packet of crushed white cheddar ridges. bake in a cupcake tin for 3 servings of 4 mini quiches. The cheddar ridges gave the quiches a bready like casserole consistency where just the omelets can turn out a bit rubbery. I thought they were delicious!

Here is the recipe:

Mini quiches
2 packets herb and cheese omelet
1 packet white cheddar ridges (gives a very nice Christmas morning casserole consistency instead of rubbery)
10 oz water
1 egg or 2 egg whites
2 cups raw spinach packed
¼ cup diced green pepper
1 cup shredded zucchini
1 TBSP chopped Scallion
Saute spinach and green pepper in dry pan.
Stir together raw onion, shredded zucchini, sautéed spinach and green pepper in mixing bowl. Set Aside.
Put 2 packets omelets and 1 packet of cheese ridges in blender with 10 oz water and 1 egg or 2 egg whites. Process until smooth.
Pour over vegetables in mixing bowl and mix well.
Spray 12 cup muffin tin with Pam or line with foil liners – not paper.
Fill all 12 cups with egg mixture distributing vegetables evenly.
Bake 350 for 35 min
1 serving = 4 quiches = to 1 packet and 1 cup veg
12.4 carbs and 1.5 gms fiber (without veg = 8.6 packet carbs per serving – not a restricted)
These are great to make ahead for busy mornings or for IP friendly Hors d’oeuvres for a party
