Default Spice up your veggies

Lately I've been making a concious effort to add more fruits and vegetables into my diet. Luckily for me, I love fruits and veggies, but I'm looking for *new* ways to enjoy them. What are your favorite ways to prepare and season these oh-so-good-for-you-foods?

My new favorite: roasted cauliflower with a little seasoning salt, pepper, and freshly grated parmesan - yum!

I've been putting miso gravy on my raw kale. Just a few drops of it really makes a difference in taste, and it softens up the kale a bit for easier chewing!

Basalmic vinegar on spinach is to die for.
Chevre with tomatoes and cukes, pepper and maybe a little basil in a tortilla or on a sandwich is yummy too.
Baked sweet potatos with jalepenos & low fat sour cream.

Saracha hot sauce on everything! If not sautéed into an egg or soup, I mostly roast veggies in the oven with a little olive oil, salt and maybe some herbs de provence and dry ground mustard.

Lately I'm on a salad kick, having a side salad of field greens and raw veg with a low cal dressing I found called light Gardini's Greek Vinaigrette that only has 50 cals in two TBSP. Not bad!

My two favorite ways to eat veggies:

Roasted, I mix a lot of different veggies together drizzle with 1-2 tables spoons of olive oil then add salt n pepper, or Tastfully Simples Tuscan Seasoning, or Tastefully Simples Spinach Dip mix, or Good Seasonings Italian Dressing Mix, just depends on the mood.

Salad: Romaine, spinach, baby peppers, cukes, green onion, grape tomatoes, broccoli, green onion, shredded carrots then either balsamic dressing, light western, or light three cheese ranch dressing. I like VERY LITTLE dressing, I usually only use 1 tablespoon on a large salad. Sometimes I add avocado and a few dashes of balsamic vinegar and skip the dressing altogether.

I make roasted veggies at least once a week, and you can ALWAYS find a big bowl of veggie salad in my fridge.

I like to marinate aparagus and red peppers in balsamic vinager, chopped garlic, lemon pepper and various herbs (a little olive oil optional) then grill them on the bbq. Crazy delicious!

I steam a lot of broccoli, baby carrots, and cauliflower. Then I add a little onion and garlic powder to them. Hot sauce if I'm feeling a little crazy.

Also popcorn seasoning is a great way to go. only 2 calories and they have some great flavors. I use the white cheddar, ranch, and cheesy jalapeno.

I find I can use a lot less dressing and still get the taste of it if I dip my fork in a container of dressing on the side of the salad rather than pour it on top. Less than a tbsp will do, so I don't mind if the dressing I want is a little higher cals than I would want if it was poured on top. it works for other sauces too, like cheese sauce and broccoli.

Sometimes I top my veggies with whatever I'm making dh for dinner. I can have a big bowl of veggies and just a little topping... very filling.

If I make him cream chipped beef on toast (super easy supper!) I'll have 1/2 cup of this at 160 calories, but instead of toast I'll put it over cauliflower or broccoli.

Another favorite is using the spaghetti sauce , at about 100 calories for 1/2 cup, but instead of pasta I pour it over veggies... grean beans is my favorite for this dinner, but any veggies will do!

I'm with Misti, Lime or Lemon is very enhancing. Also here we use a lot of Mrs. dash. If I have extra pain going on (which is often) I will include curry/cumin/tumeric, it is non to combat many pains. Spices are nice to help any dish.
