i use leftover COLD mashed cauliflower and add 3 tbsp egg substitute or egg whites, mix well, add some dried onions and a few cheddar veggie shreds that have been chopped fine, put it all into a baggie, clip off the end, and pipe onto parchment paper in little tator tot sizes, then bake 375 for about 10-12 mins. they puff like little tator tots!!
you can use land o lakes cheesy seasoning instead of veggie shreds too and you can also add garlic and parsley.
cold leftovers work best as it holds the shape better

I'll have to read the ingredients of land o'lakes cheesy seasoning. I won't eat the veggie shreds. Sounds good, tho.
Breakfast: IP Capuccino drink and coffee
Lunch: Tuna with lettuce, onion, green and red pepper and WF Balsamic
Dinner: IP Strawberry wafers and dill pickles
Snack: IP Chocolate drink w/ WF caramel (heated)
