I would do what others suggested. Eat smaller bites, spit it out if you can, work it in to your daily calories if you can't. Also, exercise. It allows you to take in a greater amount of calories.
You have these low carb diets, too, that support a higher fat intake along with a lower carb intake. Maybe investigate that. South Beach or Atkins are two that come to mind. You don't have to do the super strict, super low carbs like Atkins induction phaze, but look at keeping your carbs below a certain number of grams per day or something like that.
Also, do you find that the testing of the cheese reduces your hunger? They say to eat slowly, have a little snack or drink lots of water before a large meal so your stomach realizes it's full (that 20 minute rule). Do you find that if you test some brie before lunch or dinner, that you eat less as a result? Maybe the taste testing can be a good thing!
