Default What to serve with pork on Phase 1

Mods please feel free to move this if you want, but I didn't know where to post it exactly.

I'm having pork for dinner, but am clueless what to serve with it. Normally I'd serve it with baked apples but that's obviously not a choice lol

Thoughts?

*I really don't want to do green beans because we eat those all the time and are kind of sick of them...

How about halved, brussels sprouts drizzled with olive oil and chopped shallots and pine nuts, roasted until the sprouts are almost carmelized?

Or a mix of roasted cauliflower and broccoli?

I, too, was going to mention both roasted brussels sprouts and roasted broccoli. both are huge favorites in this house.

what about spinach, sauteed in olive oil and garlic, and then throw a wedge of laughing cow cheese in to make it like creamed spinach. i make it a lot for breakfast actually, it is a big hit.

great idea adding laughing cow to spinach! i've never thought of that just used lf cream cheese and lf parm! thanks!!!!

My fav with pork is sauteed red cabbage. Rachel Ray has a great recipe on her web site - uses apple cider vinegar (which, I believe, is okay Phase I). I used to make it with green apples but now I don't miss 'em a bit!

Thanks y'all! I have to laugh -- last time I had pork we did have brussels sprouts with maple butter (sf, and not really butter)... Quite tasty but I don't have any more sprouts.

We ended up with sauteed zucchini with onions. It was good, but I still can't wait until I can have apples again lol
