Default Cake

I have some cake mix I want to get out of my house. I am going to a potluck and volunteered to bring a cake! What is something I can do to make a white cake or a yellow cake interesting ?I do not plan on any leftovers to bring home.

If you want something healthier, you can always make a diet soda cake - any flavor diet soda with a white cake will make a lower-calorie cake.

I made a delicious white cake for my boyfriends bday. We got a white cake and bought strawberry flavored icing. We made it like a regular cake but in between the layers we put a little bit of frosting and some real strawberries in a strawberry gel. Doubt it was super healthy but it was delicious!

pudding as a filling is always a good think i go for, also before icing and filling it brush it with a simple syrup (flavored if you like) to moisten it.

Are you looking for decorating tips, or flavor tips?

On a similar note to above, I've added lemon zest into a yellow cake mix, filled with fresh berries and vanilla bean pastry cream, then frosted with stabilized whipped cream and garnished with fresh berries.

The semi home made show had an awesome idea that I've been wanting to replicate - she did it with an angel food cake, but you may be able to just do it with a white cake instead. She made it in a bundt pan, used a cool whip with a little bit of zesty fruit flavoring added for the frosting, and decorated it with little mandarin oranges, and put a daisy in the middle! It was so summery, light and adorable. Loved it!

Thanks, for some good ideas. I'm not much of a decorator but I think I might try some of your decorating tips.Mandalinn , your cake with the lemon zest and fresh berries sound delish.And Eskimomad yours sounds yummy , I think even I can do that one. I try not to eat cake but I still like to bake one for someone else. I want it to be so good that I can't take any home.

Mandalinn-So, with the diet soda cake, is it just diet soda and the mix? Just curious because I love a good light cake when the occasion arises.

1 box cake mix, 1 12-oz diet soda, bake as directed. That's it!

I also make it in small batches so I don't overdo it...1 serving cake mix by weight, 1 ounce diet soda, mix and bake in mini muffin tins.

Hi all,

I am lurking here as I get closer to my goal... hope to be introducing myself soon but couldn't resist posting this:

1 lb frozen fruit, any kind
1 20 oz bottle Diet Sprite
1 box white cake mix

Spray a 9x13 pan. Layer frozen fruit evenly on bottom of pan. Sprinkle dry cake mix evenly on top of fruit. Make sure there are no clumps. Carefully pour the diet sprite over the entire cake mix to moisten. cover with foil and bake @ 375 for 25-30. Remove foil and bake an additional 10 mins or until brown.

Comes out like a cobbler. You can try all different kinds of fruit and cakes -- we like peaches and blueberries!

I agree with bake it over fruit.

Like a package of frozen blueberries or mixed berries. Just dump it in the bottom, and pour cake on top. Bake as usual. I don't bother with the soda.

Or bake as usual, cube, then layer it in a clear bowl with berries & cool whip.

Can also swirl the fruit. Blender smooth.

Pour batter into pan. Then swirl the fruit on top. Use a knife to cut it in so the marble effect is a bit better. Bake up. Glaze with powdered sugar & milk or water, and if you want to, add some orange extract to the glaze.

There ore other options beside a traditional cake. You can also make cookies with a cake mix. These are not "diet" but really good. Chewy soft kind of good.

Orange Cookies (preheat oven 375 degrees)

1 box yellow cake mix
1 egg
1/3 cup oil
zest of a large orange
2 Tablespoons of juice from the above orange

Mix together and drop by level Tablespoon on a greased cookie sheet or parchment paper. bake 8-10 minutes

Thnaks for all the suggestions. I have made the diet soda cake and it comes out really good . I am looking for something a little more special. You know how potlucks go, we all want to bring our best efforts, Right now I am leaning towards Mandalinns lemon zezt in the yellow cake mix alng with fruit and whipped cream sounds great and also Eskinonads idea with white cake mix cool whip and mandarin oranges. All sound good ,and I don't plan on eating any.
