Curly Maple's Applesauce Muffins
Ingredients:
1 cup SplendaŽ
1/2 cup sugar
1/2 cup light butter or margarine, softened
2 large eggs
2 cups all purpose flour
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. ground cloves
1/4 tsp. salt
1 cup unsweetened applesauce
Preparation:
In a mixing bowl, cream sugar and butter. Add eggs, one at a time, beating well after each addition.
Combine dry ingredients; add to the creamed mixture alternately with applesauce. Mix just until combined.
Fill cooking spray coated or paper-lined muffin cups two-thirds full.
Bake in preheated 350F oven for 20-25 minutes.
Cool on a wire rack.
Makes: 1 1/2 dozen
