Well, that's a very broad question, so I'm not sure exactly what you want to know, but I will try.
When you go for long periods of time without getting enough hydration (whether from drinking water or eating foods high in water content, like lots of fruits and veggies, etc.), your body STORES all the water it can get. This water retention can also happn if you have been takingin a lot of sodium, and it also happens a bit when you do strength training exercises (muscles hold water after a workout while they repair themselves).
Most people find that when they first start a new eating plan, they lose a lot of weight in the first couple of weeks. This is typically due to getting rid of a lot of this water retention (from not drinking enough, not eating healthy, takingin too much sodium, etc.), so since what a lot of what they lose is water, it is referred to as "water weight."
During the weight loss journey, a lot of people will notice they have gained weight according to their scale a day after eating something diferent, even if they stayed within their calories. This happens a LOT when people go out to restaurants (since restaurant food is NOTORIOUS for having a ton of sodium). Even if they just have, say, grilled chicken and veggies, there's a lot of sodium hiding in there, and it can cause them to retain some water, which shows up as a gain on the scale. This is usually just temporary, though, and will go away with a couple of days of eating healthy and drinking plenty of fluids again.
When you regularly get plenty of water (again, not only by just drinking water, but also from water-dense healthy foods), your body does not need to retain it since it knows it is getting a regular supply, so while it may seem counter-productive to our common sense, drinking MORE water regularly will help to flush out any water retention.
