Default Easter/ Passover menu ideas?

Rhonda was mentioning Easter dinner in the daily thread...so I was wondering what the rest of you are having?

Heres what Im thinking..

whole wheat/ low fat lasagne
broccoli/cauliflower bake
green beans cooked in chicken broth/garlic
whole grain buns (if I can find them)
roasted garlic
dessert:
7th heaven(our local restaurant makes this..and its sooo good and low fat)
meringues, strawberry puree, chocolate frozen yogurt

That dessert sounds so delish!

Passover is very core-like if you forget about the matzo - because you can't eat breads/grains you do end up eating more proteins, veggies, fruits - no rice, corn, peas and certain other veggies - but basically very healthy eating if you choose not to add too much butter, eggs, etc.

You can of course count points for the extras!

So far no invites to Sunday dinner here - but I bet dh's family is rustling something up for this weekend! Probably turkey and ham (I can eat the turkey but how will I ever resist the stuffing?)

my SIl just invited me to easter dinner on sunday but its a turkey dinner..so Ill be ok. Im offering to make a salad so Ill fill my plate with it..

Hi All,

I'm having my family over for Easter Dinner. We're having:

Curred Salmon for appetizer - core except for the bread its served on.

Alton Brown's Leg of Lamb (its grilled and has a rub of 4 tablespoons oil over 12 servings so 1 teaspoon each, herbs and garlic)

Roast Baby Vegetables - it's a cooking light recipe so it has only a tablespoon of oil for 10 servings and then herbs and vinegar

Coleslaw - its a fairly light one with veggies/herbs/celery root and buttermilk dressing the buttermilk would have to count but it's low points

Then my mom's bringing rolls which I'll probably skip or count

And my sister's bringing a b-day cake for my other sister. Not a big sweets eater though so not to big a deal.

The big problem will be the wine I'll just stick to water until dinner to help cut back and count.....
