I love the build your own california rolls idea. I was a bit unclear on some of the instructions...

Sorry I was not clear I should have reread this...ok what you do is take two eggs scramble them and then put them in a oiled or pammed skillet (I add some toasted sesame seed if I have it on hand) you want a thin egg pancake you can cut into thin strips ..It should be very thin I cook it on med until it is dry on top it usually covers the bottom of the skillet ...then when it is dry I take and flip it with my fingers cook the other side for like one min and carefully then flip it out of the pan on to a dry surface and cool while preparing the other stuff ..when cool roll it up and slice it in thin strips
all the strips are kind of a long jullienne about 1/4 inch by maybe 3-4 inch strips
the trick to this is to have neat piles of strips that are about the same size lots of colors and tastes ...and yes JICAMA is great for this easy to slice!
so picture this ..you have a big round platter devided like a pie then in each pie slice there is a pile of strips of veggies, the egg pancake strips and maybe some mock crap strips.. you take a slice of the seaweed in your hand and then a few (do not overload the roll) of each thing put it in the center of the seaweed roll it dip it and eat it!!!
Not only is this a very yummy recipe ...it suits almost every diet except maybe low sodium!...Low carb...low calorie..low fat..vegetarian.....vegan (if you skip the crab and egg) WW South Beach...all of them!!!! and an added bonus is it is really cheap to make!!! when you consider one red bell pepper makes a huge pile of strips!.....ctting the strips takes some time but is worth it ...I recruit my husband he is so anal that all the strips are perfect when he is done!!!! I really can not say enough about how nice this is and solves a lot of issues for a pot luck dish that unless you are offended by seaweed everyone enjoys!!!!....oh and it is really well with a cold beer if that is allowed in your eating plan!!!
