Default Bread Pudding Recipes

Bread Pudding - 4 Or 7 Points

Amount Measure Ingredient -- Preparation Method

1 cup 1% low-fat milk -- * see note
1/4 cup egg beaters 99% egg substitute -- * see note
1 package sugar substitute
1 teaspoon vanilla extract
1 slice natural ovens right wheat bread -- low cal., * see

2 tablespoons raisins
cinnamon

1. Mix above ingredients in small Pyrex dish, then add 1-1 oz slice bread
cut into cubes & the 2 T raisins. Let sit for a few minutes to absorb
fluids. Top with cinnamon Bake in 350 degrees F oven for 50-60 minutes.

* Original recipe called for 1 egg or egg substitute, & regular bread.

Old Fashioned Bread Pudding - 4 Points

1 package Jell-O vanilla S. F. cook & serve vanilla
pudding mix -- (4 serving size)
1/4 cup pourable Sugar Twin or Sprinkle Sweet -- divided, see directions
3 cups (two 12-fluid-ounce cans) Carnation
evaporated skim milk
1/2 cup raisins
1 teaspoon vanilla extract
1 tablespoon reduced-calorie margarine
6 slices reduced-calorie white bread -- torn into pieces
1/2 teaspoon apple pie spice

Bread pudding is a comfort food classic that recalls the sweetest childhood memories for me. Why not start a new tradition in your familt with this wonderful version?"

1. Preheat oven to 350 degrees F. Spray an 8-by-8-inch baking dish with butter-flavored cooking spray. In a large saucepan, combine dry pudding mix, 2 tablespoons Sugar Twin and evaporated skim milk. Add raisins. Mix well to combine. Cook over medium heat until mixture thickens and starts to boil stirring constantly. Remove from heat, Stir in vanilla extract and margarine. Add bread pieces. Mix gently to combine. Pour mixture into prepared baking dish. In a small bowl, combine remaining 2 tablespoons Sugar Twin and apple pie spice. Evenly sprinkle mixture over top. Bake for 15 minutes. Cut into 6 servings. Serve warm or cold.
