Default Potluck Advice?

I have a very small potluck supper meeting to attend tomorrow. I would like to take something yummy, but Core. Any suggestions for me?

I am taking a main course. Maybe a dessert too, if anyone has some good suggestions! But I mostly want to make sure I take a Core main course so there is definitely something I can eat- I am out of flex points! Also, my first WI since starting Core is on Tuesday, so I don't want to risk anything!

How about crockpot recipe for main course:

Beef and Beans South of the Border - 5 Points

Recipe By : The Best Slow Cooker Cookbook Ever
Serving Size : 10 Preparation Time :0:00
Categories : Beef Slow Cooker/Crockpot

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/4 cups dried red beans -- rinsed and drained
4 cups very hot water
28 ounces diced tomatoes, Hunt's
7 ounces green chiles -- diced
4 cloves garlic -- crushed
2 tablespoons ground cumin
2 tablespoons chili powder
4 teaspoons dried oregano
1 teaspoon ground coriander
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon cayenne
1 1/2 pounds lean boneless beef top sirlon steak -- cut in 1/2" cubes

1. In slow cooker mix together all ingredients.

2. Cover and cook on high for 1 hour. Reduce heat to low and cook 8 hours or longer or until the beans and beef are tender. Season with additional salt and pepper if desired.

Calories: 257.4
Fat grams: 10.6
Fiber grams: 7.2

W/W Points: 5

This is one I enjoyed on Flex but all the ingredients are Core.

Dessert how about this (again it was a fav on Flex but all ingredients are Core):

Strawberry and Melon Salad

Recipe By : Great American Recipes
Serving Size : 4 Preparation Time :0:00
Categories : Fruit

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cups strawberries, whole
1/2 large cantaloupe
1/4 large honeydew melon
1/2 cup fat-free plain yogurt
2 tablespoons olive oil
2 tablespoons honey
1 tablespoon white wine vinegar
1 teaspoon fresh ginger -- minced

1. Wash strawberrys and remove hulls.

2. In a bowl combine yogurt, oil, honey, vinegar and ginger. Stir to mix.

3. Scoop out and discard seeds of melons. Cut off rind. Cut melons, lengthwise, in thin slices.

4. Arrange slices alternately and in a fan fashion on a salad plate.

5. Garnish with whole strawberries.

Calories: 181.8
Fat grams: 7.3
Fiber grams: 2.7

Thanks, Kelly! I think I will try the slow cooker recipe. It sounds like something my DH would really enjoy too! Thats something else I like about Core, it is easier to please everyone.

On Core or not-I am known for always bringing a pretty tray of fresh cut up fruit to gatherings-the basics like grapes, cantalaupe, strawberries...but also fruits a little more exotic that a lot of people don't eat as often-like sliced kiwi, peeled and sectioned clementines (fresh mandarin oranges), and pieces of mango. If you have a nice serving tray it is actually a very pretty thing to bring with all of the colors and textures together.
