I made yellow rice the other day in my turbo cooker and at the same time cooked peas and carrots in the rice. Steamed salmon steaks on the steamer rack at the same time. The salmon is higher fat but I do love it and with fat free rice and veggies, I figure it averages out OK.

I am thinking of making a carrot cake today from Susan Powters old FOOD book. I have made it before and it is really delicious. Would you like the recipe for that?

For a place called Pastry Wiz, they sure have a lot of low-fat recipes!

I like the old standbys that have been around a while
http://www.lowfatlifestyle.com/recip...ecipeindex.htm
http://www.recipezaar.com/browse/index.zsp?path=0FC0A3
http://www1.xe.net/lowfat/recipes/

The Low Fat Vegetarian mailing list has some great recipes and ideas (it's pretty strict -- no added fat -- or at least it was when I was trying that WOE)

http://www.fatfree.com/

(this one even has some recipes from me when I was on this list YEARS ago (1994), before it had a web page)

You can even browse Epicurious for low fat recipes if you need something a little more "special", though I have no idea how they classify "low fat" compared to some of their full-fat recipes.

And of course, for all you ever wanted to know about low fat cooking, including tips, tricks, and recipes, visit About.com

1 tsp good quality olive oil

George Foreman grill

I Can't Believe It's Not Butter spray

My Tupperware Micro Steamer

These are things I use to make lowfat meals. Also, lots & lots of spices, chili powder, Mrs Dash, etc. Spice it up!
