I know, it's not a catchy title but bear with me!
I've been trying to find a wheatless bread I can eat and enjoy. Gluten's fine, wheat gives me sore joints and loud intestines. If I have to live breadless for evermore, so be it - but oh, sometimes for a sandwich!
Anyway, my last try was a spelt uncut loaf but alas, it's just not 'it'. However, as I contemplated 3/4 of this bread that cost me about $5 the loaf, my frugal soul rebelled at putting in the bin, so the recipe was born. The amounts are what I had in.
12oz bread, cut into very chunky cubes, at least 2" each.
1/2 cup lactofree milk
2 medium eggs
4 oz soft cheese, Philly
less than 1/4 tsp dried chilli flakes
3/4 tsp ground nutmeg
Put the bread chunks in - all I had was a round cake tin.
Blitz the rest of the ingredients in a blender.
Pour over the bread - make sure every bit gets a drizzle at least.
Bang in a hot oven - mine was Gas #9, the highest for about 20 minutes, or the length of time it takes to drink a mug of black coffee.
This was absolutely gorgeous! I would happily make it again. It doesn't have to be expensive bread, for those who can eat wheat it would work perfectly well with storebought cheapest brown/wholemeal.
The top layer is crunchy; the middle infused with milky, cheesy, nutmegness; the rest of the eggy milky stuff goes kind of omeletty on the bottom.
Calories: about 300; Carbs: about 40g; Fibre: about 7; Protein: about 15.
