This year I have to change things around due to my new and permanent eating lifestyle. This was always what I requested for holiday dinners from my mom. This is mom's recipe!
Mashed Turnips:
1 large turnip (peeled and cubed into 1" cubes)
1 C. milk (here I'll change to 1 or 2% milk)
1 C. shredded american cheese (here I'll change to 2%)
1 stick unsalted butter (I'm gonna leave this out completely)
salt & pepper to taste (SPTT)
In a large stock pot add turnip cubes and cover with cold water till about 1" over top of cubes. Bring to a boil and then lower to a med. hi setting. Cook until fork tender.
Drain and rinse, transfer to a large bowl and mash away with a potato masher. While still hot add the american cheese and blend until melted. I usually add the milk slowly until I get turnips to my desired consistency, kinda like mashed potatoes.
SPTT
Enjoy
Let me know if you try it!
